  1. As always looks awesome.
  2. I use a cast iron griddle placed on top of the grate and get the surface very hot, say about 450. I commonly cook crispy skin salmon and sear tuna as well.
  3. You always do such an amazing job, it looks absolutely delicious.
  4. Nice cook and equally nice pics!
  5. Looking forward to seeing the finished product, and thanks for posting the brine recipe
  6. Looks delicious!!! It is definitely a variation on Due's from Chicago. I plan on doing a slightly different version from Pequod's in Chicago (my favorite pizza in the city) It has caramelized cheese on the outside crust. I will be sure to post pics and the recipe. Look for it in a couple of weeks. Again great job on the pizza!!!
  7. Ok , I can say I never heard of this, but it looks really decadent and delicious. How about a recipe?
  8. Good job. I do wood working and restorative finishing as well. I have to tell you not only has Dennis designed and built the best komodo style grill on the market he is also a skilled furniture designer and master woodworker. I am equally sure he has some outstanding tips for teak restoration, I think the forum would like to hear from him on this topic. There are several solutions and the more information we all have the better. Great post Wilbur!!
  9. A little ice on the pumpkin! We here in Chicago were to supposed to get a killing frost as well, but that did not happen.
  10. Welcome Chicagobill. Looking forward to seeing your pics.
  11. MacKenzie, I always enjoy your posts.
  12. I love the addition of the stainless. Take a great product and make it better.
  13. Like a kid waiting for Christmas morning.
  14. I concur. I would add as well that it takes strong leadership, foresight and an employer who is a good motivator.
