In my area, the perfect crawfish dipping sauce has catsup and horseradish. A sprinkle of Worcestershire sauce won't hurt it either. It can't be too hot for me. I love fresh horseradish in a cocktail sauce. It's great with boiled shrimp too. The commercial wimpy stuff isn't allowed...can you spell Kraft? -

Thank you for the info, Tyrus. In the BBQ smoker world, you definitely get what you pay for. For the coincidence of the day, the cost of the Santa Maria you have is within $30 of the estimate I got today for a replacement wooden fence. Fence/BBQ Fence/BBQ. Who will win?

jeffshoaf, the Bone Sucking Sauce company also makes Bone Sucking rub. It's the one rub I've really liked besides my basic homemade rub. If any rub has salt as the first ingredient, I don't buy it. -

I'll check it out. OK, it's a Santa Maria grill. They are pricey there but there must be a reason. I've looked at several and Lone Star makes a nice one. This or an Argentina grill is what I'd like for live fire cooking.

Made some chicken sates that turned out very juicy and good. Also made some sweet rolls with the grandkids.

Steven Raichlen had a basic rub in one of his first books that I still use today. Equal parts salt, pepper, sugar and paprika. Over the years I've changed it to half the salt as the other ingredients and it works well on every meat I cook. I do like to experiment and pick up a few commercial rubs now and then, but I always come back to this one. -

Hey CaptMorg82, I had Blink for a week and returned it only because the night vision was horrible. It looked like I sprayed WD40 on the lens. Other than that, I liked them. bGrant, I looked long and hard at Eufy. The complaint I read the most about was that sometimes it didn't register motion. Even something like a car parking in the driveway. Only one person suggested it, but I ordered some Ring cameras. I know they aren't perfect either but they come close to doing what I want. Should get them tomorrow. And thanks again everyone who responded and shared their experience.

Aussie, I’m considering that exact model David, The pooch is a great watchdog….when she isn’t sleeping. Cheesehead, the have a good Lorex on sale at Costco right now. POE system Not bad at all Jeff. But that creature was too scrawny to put on the pit. Mac, I may go that route no matter what I get. The system I have now attracts lots of spiders building webs across the cameras.

Jeffshoaf, when I see the Google Nest cam tested, it always does great...except for night time. The ones I've seen are pretty bad at night. Otherwise, I'd go with them. I know about those Prime days, that's why I'm trying to pick one to order Tuesday. Thank you! 5698k, Ring is what I was looking at. Seems pretty simple and doesn't miss a lot of motion detections. The new "Outdoor Stick Up Wired Cameras" can also use a battery if needed. Doesn't come with one. David, Wyze V3 was praised big time...until they decided to start charging for stuff they used to give you free. Maybe not where you are, but here in the states they pulled that stunt. Thanks for the input. I've got a day and a half to decide before I order. Eufy is well liked but they miss some motion detection. Anyone else?

I'm wanting to put up a 4 to 8 camera security system and wanted to know what you guys and gals are happy with. Thanks for any info. Just to add a KK comment, I'm cooking some pork belly as we speak!
