  11. I know you've all been very very patient with me, and so its time for the big reveal! Since you've all experienced the delivery, I won't post all those pictures.     You were missed MacKenzie! Its funny, they actually lifted it up onto the deck when I stepped away to find another friend. They didnt want me to see it go up, and thankfully I didnt - I'm sure I would have had another heart attack! LOL

    Howdy all! As was pointed out to me by several of you, why waste all that good heat during the KK burn in! Since I hadn't planned on cooking, I just used what I had on hand and settled on fish tacos. I spiced up some Mahi Mahi and shrimp, then for toppings I whipped together some guacamole and made a quick slaw. For the side, I made some rice cooked in chicken stock with onions, tomatoes, cilantro storks, cumin, turmeric and other spices. This really was whipped together quickly, so there are no recipes. It was a little of this and little of that I have no idea how or why, but when I cut into the fish it literally squirted juice out! I've made these fish tacos the same way for years now, but these were the juiciest I've ever made. To quote Wilbur, its not me, its the KK! My best guess is because it was so heat soaked, from 7 hours of burn-in, that it perfectly seared (on the CI griddle) and roasted at the same time, locking in the juices and cooking it through evenly. Or maybe it was a placebo effect, since grilling it for a short time wouldn't really make much difference in moisture usually. Who knows, but I do know is that I really enjoyed cooking and the meal was a big hit! My griddle just barely fit on the grill. Guess I'm going shopping. Look at how juicy that fish is!     Thanks to a few calls to Ryan and Dennis, all is well with my KK I have read that it might still vent a little during the next couple of high heat cooks, and thats ok. I think I got most of it done. Today is the big day it gets moved onto the deck and then I'll have some pics to post PS - I should add (for those that follow), yes its daunting because its my first time, but its easy and I really don't think you can get it wrong! The hard part is trying to just sit back and let it do its thing. Trust me, if I can do it, anyone can
