dstr8
Baked off tonight...and my KK did as expected so many times before. Love this thing! 4-pies 1. Classic margherita with fresh buffalo milk mozzarella. 2. Homemade Italian fennel sausage, shaved mushrooms, roasted red bells and smoked mozzarella & provolone. 3. Kimchi with bacon and smoked mozzarella. This one was my favorite of the 4. 4. 5-hour onion jam (Thomas Keller's recipe), pancetta lardon, sliced Bosc pear and gorgonzola & mozzarella cheese. The KK Cocochar and Coffee lump got a little away from me during the heat soaking phase. Pies were baked mostly at 700º.

dstr8
Tony, if you like French Onion Soup, then I recommend making it via Thomas Keller's recipe (from Ad Hoc) which includes the 5-hour onions; after making it 2nd place and beyond just doesn't exist . Although the onions sit atop the stove for 5+ hours its just one of those things you will just not believe when you taste the finished product... and make time to do it a couple times a year. tony b
Having made "bacon jam" and "tomato marmalade" for a close friend's daughter's wedding reception. No sweat! footnote: they went with an arugula aioli to make kicked up BLTs on toast points.
