Roasted Tomato Soup

Made a batch of roasted tomatoes for tomato soup and it smelled so good I did a second batch.

 

Ready to add the tomatoes,  onion, bay leaves and thyme. In the pan are olive oil, chili pepper, garlic, salt and pepper.

Roasted around 400F until well reduced.

Add some whipping cream, chicken stock, brown ale and simmer 15 mins. Blend until nice and creamy. Then dress it up with olive oil, basil, croutons, cheese-

It's all diluted down with the brown ale, the chicken stock and a whole lot of whipping cream. This not the kind of soup that you have a lot of, a cup will be enough, it's so rich. :)

I suppose I could have added red food colouring, I don't think so;)

Definitely got a chuckle out of me.

 

Is your butternut squash soup red...LOL.

BTW everything is Red in Atlantic Canada tonight, see if you can keep up with us. :) Remember we are always ahead of you even it's only by 1 hour:)

Don't you dare!!! Otherwise, I'll have to come all the way up to NS and slap a girl upside her head! 

 

Did you run the tomatoes through a food mill/chinois after roasting to strain out the skins and seeds?

Have no fear, I'm not putting red food colouring if I'm eating it;) I put the whole mess thru the vitamix. :) I probably should have put it thru the food press.:)
