Thanks, Jon. :) Sounds like a wonderful thing to do but it isn't exactly a hop skip and jump. I would be an overnight trip with lots of driving. :(:(:(

I put this post here because the star of this dinner really was the air fryer baked potato.

Oiled the potato and cooked it for 30 mins in the air fryer at 400F then flipped it over for 20 more mins.

Removed the potato, mashed it and added some cheese, cayenne pepper and yogurt and put it back in the shell.

Baked it for another 6 mins until the cheese on top started to brown.

On the KK was bacon wrapped tenderloin.

Plated with some of my peas.

The potato shell was so crisp and tasted, the best I've had in a very long time.

Thanks, Tony, the stuffing was delicious too but that crust was awesome. I never expected it to be that good, it's worth the price of the fryer just for baked potatoes. :)

OK, MacKenzie, I have you to blame. I just ordered the air fryer. Got the refurbished model on Amazon - $90. We'll see if it replaces my Fry Daddy.

ROFL, you do realize that if your baked potato is not as great as I lead you to believe I do have a come back---it's a different model. Actually I do hope you find the potato just as good as you are expecting.

Update, the AirFryer is supposed to arrive now on Friday, so I should get to play with it over the weekend. I'm thinking sous vide beef tenderloins and baked spuds in the new fryer.
