Poor Man’s Smoked Ends

I've gotten to where I prefer to do chuck roasts instead of briskets, because the size is more aligned with what I need. Cook them just like in the vid (except for the burnt ends part). Sliced on a plate, you can tell the difference between the roast and brisket.

Thanks, Aussie. It wasn't that expensive on Amazon when I got it ($75), but you can't get them anymore. It's my basic slicing knife now. A tad more work to keep sharp (it's only one-sided), but it's a nice knife. 
I have an old set of Mundial knives that have served me well with the help of my warthog. I look at all these really nice knives and go how kewl (kewl dam you ckreef payback for chook lol) .but mine are so sharp and do the job .but I still want them lol
