I usually buy pork from a local farm but the pigs must’ve been on a diet recently. Way too thin. I was in my local market which sells wagyu beef for relatively cheap prices and they had these Niemam Ranch extra meaty baby backs. I usually don’t care for baby backs and prefer St Louis but these really are meaty and flavorful enough that I’m a big fan.
