  1. I'm feeling the pressure. If I can get out there to get another box I'll make another batch or two. . I did pop open a jar of Reef Jam and a jar of Blueberry BBQ Sauce last night to see how they came out - yummy Reef's Bistro

  3. This cook reminds me of a story.. The first thing ckreef ask me how i like my steak cooked.. I said med-rare.. He wipe his brow and said "if it was well done..   4. When I got my first kamado, an XL BGE, within a month my gasser and stick burner were gone, gone, gone. Sold off with absolute impunity. When I took delivery of TheBeast, my like new Primo was gone to a new home that had been lined up for weeks. After the KK hits your patio, everything else pales to insignificance. And I just can't see more flower pots on the patio!

  5. Tomorrow between 9AM and 12PM I will officially be a KK32 owner......well if the trucking company comes through. It's been quite the journey and hours upon hours of analysis. Absolutely hit the paralysis by analysis stage, but powered through and after talking to Dennis pulled the trigger. Also a shoutout to my new buddy CeramicChef, as he provided some sage-like advice. The color decision became a family battle with mommy winning- shocker right! We decided on a color Dennis called "Levi". So we have narrowed the names down to "501" or "Strauss", trust ya'll can figure out why. Got a few accessories- extra basket and splitter, the grate grabbers, rib rack, and 5 boxes of each type of charcoal. Figured I should load up to take advantage of the low shipping. Thrilled to shortly be in the family, though my credit card says I am already. Pictures and unpack process to follow.

  10. The wife and the neighbors wife got it unpacked. Me, the wife and the sprinkler system crew then got it to the backyard. We played a leapfrog game with plywood sheets to get through the garden and to the patio, when it now rests. Taking a break from the Memphis heat before fully unwrapping and taking further pics. Moving the Bad Boy was a lesson in physics. Objects in motion........don't stay on the path or the plywood. wow.

  11. Honestly this was my first attempt at brisket, let alone burnt ends. I kept it real simple, just smoked it for about 8 hours and wrapped in butcher paper for the last 2 1/2. KK's are great with moisture so as long as you have the patience to cook until probe tender, you really can't go wrong. Although, I am curious to see how Raichlans brisket comes out, so please post when you cook!

  12. I did my first brisket point last weekend! Overnighter and the KK held solid at 250F with no gadgets! I wasnt sure how it would turn out, but I was very happy with its performance and of course the burnt ends

  21. It was a long full weekend at the Bistro. Here is a quick recap. . Friday night leg quarters. Saturday we got up early and went to Lane Packing. A peach orchard and packing facility. Brought home some supplies for the weekend. Saturday night was date night. . Yakatori Date Night - Where you go nowhere, get your date drunk, and make her cook her own food. . Sounds like the perfect date to me. LOL - Actually it's Mrs skreef's favorite date night. We always have a good time playing with the Yakatori grill. Sunday got up early and drilled my new smoke pot. Dinner was beans fresh off the KK, Brats, and summer slaw. After dinner Mrs skreef made a peach cobbler. While she was cooking the cobbler I got the fireworks lined up and ready to go. Just a small $100 display. Just a couple of pictures from Sunday night fireworks. Why do you want to spend extra money on good fiberglass or pvc mortar tubes like these? Because the cheap cardboard tubes they give you blast apart! A mortar shell going off in all directions at ground level definitely adds to the excitement factor. During all this we were working on various house projects. Even so we managed to find time for a motorcycle ride Monday morning. Got home and spent some time canning various things. Reef's Komodo Peaches, Reef's Blueberry BBQ Sauce, and Grilled Peach Reef Jam. Monday night was a few ribs. That's all I got. Various other threads posted detailing some of this.   26. If it ain't broke, don't fix it, as the saying goes. There is a small downside to opening the guru damper all the way - windy conditions. Even with the top vent almost closed, you can vacuum drag enough air through the guru fan port on a moderately windy day to cause your temps to increase beyond the guru's setpoint and it will stop running. Then, fingers crossed that your fire doesn't go out before the temps drop back down under the setpoint where the fan will start running again. Or, if it stays windy, your fire won't go out, but the temps will just keep creeping up to match the airflow caused by the wind. I've seen situations where my temps went up by 50F, so this advice is from firsthand experience.

  27. Thank you @Shuley & @Aussie Ora The pineapple kept the chicken moist and gave a sweetness and subtle pineapple flavour. I did add some grilled pineapple to the rice, but next time I would add more, or like the book suggested, serve the chicken with a pineapple salsa.

  29. Nope don't use the oven very often anymore. We try and do most of the cooking outside. . Love my wife, love my bike. I guess we'll keep it in that order although she might tell you otherwise - LOL . Fireworks just became legal last year in GA. I'm loving it. I'm getting to know what fireworks I like best. . It was a full weekend but had a lot of fun. Reef's Bistro

  31. There's no need to try and trick the cyberq, also no need to choke the fan. As you noted the trick is to keep the top vent almost completely closed. I just barely open from being able to feel the gasket. The cyberq learns your grill during a cook, so if it's not acting just right, re cycle the power. I've used these things for about 4 years, and I love them. There's no need to stay at 225°, it's not a problem, but higher, I like 275°, is way more predictable, a good bit faster with no difference in results. Do you already have the bge coal? If not, get royal oak, that's what bge coal is, just in a different bag and more exspnsive. Rob

  34. Go up to the top and read post one. I remembered this post and finally, 4 years later, decided to try this outfit. HOLY SH.., I will never buy spices at the grocery store again!!! Dennis is dead on about this one. I just got my first order and really had no idea how dull and dead grocery store product is compared to this FRESH, just ground yesterday, ridiculously aromatic product. Do yourself a favor and do a little test order from World Spice. You will never go back. In fact, a moderator needs to sticky post one of this thread in the appropriate place as a core, fundamental principle of KK-ology.
