  1. Decided to make a nice beer bread to go with my secret recipe for Marmite butter. Had to be done in the steam oven, of course. Here is the bread scored and ready to go. Into the steam oven. Even after several minutes it’s still venting steam wherever there’s a hole. And voila! Oven spring anyone? Look at those micro blisters. Still cooling. Later I’ll slather it with my secret Marmite butter. Mmmm mmmm good!

  2. I used the @Syzygies technique, which is a large cast iron skillet loaded with SS chain so the whole thing weighs about 30 lbs preheated with the stone for thermal mass. Then introduce about 350g of ice into the skillet when the bread goes on the stone. Close lid and close down the vents a bit to trap the steam. It will steam for a good 10-15 minutes, which is all you need. @amusedtodeath posted something similar and simpler yesterday. Just pour water directly into a preheated CI pan. I may give that a go for comparison.

  3. lol...get the same song at where i work, i just tell em i should have two. I gave up the smokes 4 yrs ago saving me 8K a year (yes, the durries are not cheap here) My money my spend....should of done it years ago

  4. Just when you though Maverick was dead, they came out with this: Maverick XR-50 No bluetooth, wi-fi, cloud, or other gimmicks to make up for lack of range and dead spots in your house. Just four channels with hybrid probes, easy to set up, and 500' of RF range. Mine just arrived and I've been walking around the house and yard checking for the dead spots that resulted in my purchasing the Smoke Gateway...just so I could get a read in my home office. Bottom line: there are no dead spots. There it is, giving me four glorious, dead simple channels of signal in my worst dead spot in the house. BONUS: If you hit the buttons just right, it will also play Donkey Kong!

  7. That was a bit over 5 cups. I froze them in 2 packages of 2 1/2 cups each and gave the overage to my son. This coming Saturday I should be able to harvest about the same amount. Maybe a batch of Blueberry BBQ sauce and small pie. Might try canning a double batch of Blueberry BBQ sauce so I have a little to pass out. Haven't done the canning yet with Blueberry BBQ sauce but it should work fine. We'll see how much I have to work next weekend.

  8. Yes I got it and I love it. I started a new thread called 32” terra blue. With arring, unpacking and setup photos. Did I say I love it? This was worth every penny! As for things I should of gotten when I ordered it. Maybe just another charcoal basket and the double drip pan. But I’ll order at least the double drip pan this winter. These things are a absolutely amazing. I cooked huli huli chicken when it arrived and even going to 175 on accident it was still extremely moist. If you want to stop over and see one let me know. You will not be disappointed. Guys are giving me crap at work and saying you can get a green egg for a lot cheaper. But there is plenty of stories of those having shorter life spans. I am a firm believer of paying once, crying over it once and enjoying for the rest of my life. Also @DennisLinkletter is an amazing guy to work with!

  10. Evening All, I’ve been on www journey over the last 12 months looking for that perfect upgrade from my gas Webber Q! I looked at everything but found myself coming back to the KK. I was yet another person tossing up the 23 or the 32 - in the end I couldn’t escape the lure of the Big Bad. This is a quick note to thank all the posters on the forum, and of course the very patient Dennis for all this information. The KK is on the ship, due in 4 weeks so I’ll be sure post some pics once we eventually crane the behemoth 11 meters up onto the new terrace. Regards John

  11. Last year we had a late freeze that killed our entire Blueberry Crop. This year the winter was decent. A very rainy spring followed but a few hot sunny days. Mrs skreef picked our first harvest of the year. We only have 2 bushes but they are really big bushes. She got about 5 cups of Blueberries. We should get 3 or 4 times that many before it's all over.

  12. Yes. Syzygies did the math (anything less would have been heresy!) and figured out the heat capacity needed to turn a given amount of water/ice quickly into steam. The heat needed to convert ice to water is much less than the heat needed to convert water to steam, so the ice is just a convenient way of deploying water into the pan. In other words, water or ice doesn't matter nearly as much as the amount of stored thermal mass to turn a given amount of water into steam.

  19. Last week was anniversary/vacation, so while I took pictures, I'm afraid I'm late posting... Sorry for the long post... Skinned Turkey breast, roasted carrots and broccoli with cheddar: St. Louis ribs Sous Vide filet and Peach Cobbler with fresh peaches from Dickey Farms in Musella GA. Mrs. Amused did first bread on our KK! Italian bread turned out wonderful. @tekobo, thank you for getting me off my behind!

  20. Mistake turned out decent. I'll make a long stupid story short. Saturday night I mixed up 2 batches of dough to rise overnight. Sunday I fired up the WFO. When it got up around 750* I went inside to start stretching and building the pies. That's when the realization hit me...... I had used bread flour in my Neopolitan dough. Oh crap! Can't cook bread flour at my target 800*. I regrouped, let the WFO come down in temp and cooked the pies in the 550*-600* range. They actually came out reasonably well. I'm blaming the multiple Saturday night adult beverages on the mixup I did want to mention that although I made the pies Mrs skreef cooked them. Turning them as needed, raising them up into the dome and pulling them when done.   The pizzas were Sunday lunch. Also cooked a beef pot pie for Sundays dinner.

  22. Awesome bread @Pequod! Looking forward to the verdict on the "special" marmite butter. I made the mistake of showing The Husband a picture of your bread. You need to give us the recipe and instructions for making that bread. Otherwise he might find you and move in. He is fairly clean and tidy but I suspect giving us the recipe would be less hassle.

  23. Wow look perfect nice cook! I received my vegimite Yesterday. Anybody know how long this stuff will last after I open it? I may try it on some raisin bread tomorrow. Very very thin spreading. LOL

  24. Made some hamburger buns this morning just so I could have fresh buns for a pulled pork burger. Pulled pork burger. Add a little sauerkraut relish and we have lunch.

  26. I haven’t opened the stone, cold smoker or rotisserie yet. As I use them for cooking I’ll take some pictures. Beverage of choice for unpacking and set up was Polamas and water. For dinner I made huli huli chicken, grilled pineapple, cilantro garlic corn and butter garlic soup vide shrimp. Everything received a healthy dose of purple crack and it was cooked over full circle lump charcoal. I received a round of applause from my wife and her friend the dogs gave me big puppy dog eyes which turned into growling because no table scraps. Sorry I didn’t give any descriptions with the pictures but I am dead tired and sunburnt. I will try to do a better job for the pizzas tomorrow and the pork shoulder on Sunday. thanks again to everyone on here for the advice and gentle ribbing and a big thanks to Dennis! It feels like I bought the best damn grill around and it came with a weird family to boot.
