  1. Chicken wings and roast veg last night, I love the extra space on the 32, it’s perfect for roasting the pumpkin off direct then sliding it across indirect to finish off the wings, works a treat!

  2. Greetings KK’ers. Whilst on sabbatical, I have acquired a Mockmill and been experimenting with Fresh Milled flour. The flavor boost is incredible. Quickbreads require no adaptation at all (so far). My first two sourdough experiments have also been smashingly successful and superbly tasty. A demonstration for your amusement: The mill doing what it does...milling. A loaf of 50% fresh milled hard red spring wheat. The other 50% is Giusto’s Artisan bread flour. This was 84% hydration with only sourdough starter as leaven (no commercial yeast), and no other agents like ascorbic acid or vital wheat gluten. This was baked in a cast iron combo pot in my oven and the result was superb. Much better flavor than any whole wheat bread I’ve ever had. This week’s victim was Spelt Sourdough, using 30% fresh milled spelt, 30% fresh milled high extraction hard red spring wheat (high extraction == some bran removed using a 40 mesh sieve), and 40% Giusto’s Artisan. This was 85% hydration and only sourdough starter leaven. Also, no ascorbic acid or vital wheat gluten. Used an oblong banneton for proofing and oblong clay baker for...well...baking. Again, a superb result and incredible flavor.

  4. Sometimes the simple things are best. Tonight we started dinner with rocket (arugula to the Americans) and three different types of cured meat: KK smoked cured goose breast, proscuitto and capocollo. Followed by grilled quail. They look so small and vulnerable being cooked but they are so so so tasty! Shout out to Movida Next Door in Melbourne for introducing us to how wonderful the quail can be.

  5. Not in my house. When I remodeled the kitchen, there is no full oven. That space is pull out drawers for pot and pans.

  7. No, but I have roasted a whole squash before, just punched a hole in the top. It cooked just fine but it was just like doing it in the oven( you know that appliance that is taking up space in your kitchen. ), today I should pick up more smoking and it should be more caramelized. I hope.

  15. Woohoo Wahoo! I am soooo excited for you. I think uncrating AND doing the burn in on such a monster all on the same day might be a bit ambitious but I am all for ambition. My ambition would be to be eating something off your KK by the end of today. However given I can't be there (and haven't been invited!!!!) I will make do with you eating something off your KK today. Looking forward to the pics.

For those of you looking to do some comparative shopping here is his response: "He into coffee too! I like my Mazzer Mini Electronic - 64mm flat steel burr, 600g hopper, single dose ground to order.   18. Chicken with spicy plum sauce, air fries and Organic Ketchup. On the way to making spicy plum suace- Previously grilled chicken, plum sauce and air fried sweet potatoes with Organic Ketchup.(Just for Tony.)

  19. Labor Day cook - local corn and snags! A snak pak - polish, chorizo, and habanero. Plated with homemade fries (twice cooked in the air fryer) and a nice local beer! 3 mustards for dipping the snags and some aioli for the fries (hint, hint - MacKenzie!) And, I did use the Chippy salt on the fries, Aussie! Nice.

  20. Cooked another chicken and roast pumpkin and corn tonight, really impressed with the Weber vegetable / roasting tray. I always struggled with getting the pumpkin nice and caramelised, but this makes it easy!

  21. I just can't get enough of these Lebanese Mountain Bread Pizzas. These are fresh tomatoes just out of the garden and the I used pesto instead of tomato sauce.

  22. Had a productive day today, i smoked some home cured bacon. Not to waste the heat, I then made chicken wings for dinner, paired with Lillie’s Q Carolina sauce and a home made blue cheese dip, they were great!

  24. Made a sauce from lime juice, light brown sugar and pomegranate molasses for some chicken that I had previously roasted on the KK. Also did some skillet roasted potatoes with rosemary and lucky to find some suitable beet greens from the garden.
