@Stile88 - I only leave the lid open for that brief 5-7 minutes and I always make certain to set the alarm. I most certainly don't want my KK going nuclear because I forgot about it! In a 5-7 minute time span I can make certain the fire in the limp is well established.

I use a Benzomatic MAPP torch to light my lump. For a low-n-slow cook I'll light a single spot on my lump pile. For something in the area of 300-400° I'll light 2 spot in the lump pile. For temps in the 400-500° range I'll light 3 spots. For 500°+ I'll light 4 spots. No matter the cook, right after I light the lump I'll set an alarm on my wrist watch for about 5-7 minutes. I leave the lid up on my KK, open the bottom vent fully, and I go prep the cook. When my alarm goes off, I return to the KK, shut the lid, set my vents for the temp I want, and in short order I'm ready to cook!

I used to brew up some shone years ago. We always ran it through an activated carbon charcoal filter. The shine test out at about 175 proof. If you injected about 2 pints into a keg of beer, you had a real party! Charles, I'm looking forward to your review of this product.

Anyone here use Frog Mats? I hear good things about them, but I've never used one for veggies, fish, etc. Seems like it is multi-purpose tool. However, no edges or lips.

@xraydoc - I have found that just about any good stainless steel wire basket works well. I also have several that have been punched and those work as well as the wire baskets. I have bought both types at Sam's, Ace hardware, Lowe's, and Home Depot. I've also seen them at just about every BBQ specialty store. Size depends on on how many your looking to feed. I'm a bachelor and generally use the smaller sized baskets. However, I also have some big ones for the parties I've thrown. Seeing as how we are now in August, you might want to get in the stores as they tend to stop ordering their summer inventory around this time so they don't have to carry inventory or put it on sale as season closeout.

Charles - where I come from sloppy is nothing more than a word for "Let's shovel this Nad Boy in!" when it looks that delicious! That's a beautiful pizza pie. The picture of the finished pie cooling is top shelf! Kudos to you on a great pizza cook.

@MacKenzie - what a lovely montage! Thanks for the lovely pictures. The pics of that bloom are just beautiful. I just had a cactus the bloomed briefly, about 3 days, and then gone. It seems all beauty is fleeting. And as always, those pics of your cooks leave me breathless and drooling. Wonderful post! Kudos!

@Firemonkey - the nozzle on the Benzomatic MAPP torch that I use isn't all that long … not much more than 5" long. I doubt you'd do much good trying to light a fire in the lump basket through the blower port on the side. If anything did light, it would only be near the wall of the KK and that would pose some problems for doing any cooks.
