Poochie - your new KK could not be more stunning! Mega BIG time congrats to you. Take plenty of pics of the inside of your KK because it'll never look that pristine again. Save 'em. They're kinda like baby's first pics! Enjoy your burn in and reward yourself and your family with some nicely seared steaks at the end of the burn. Again, stunning KK. Simply beautiful.

Rider - I use a MAPP Torch for lighting my lump. If I'm really in a major hurry, I hit the lit lump with a heat gun and turbo that bad boy up to searing speed in mere minutes. I agree with your take on seasoning our KKs. The real beauty of every KK is that they are indeed very unique. And it's in learning our KKs idiosyncrasies that we take real pleasure and learn our craft. Both Beauty! & TheBeast cook so differently from the 23" I cooked on. All 3 have unique "personalities" but all have produced some of the finest food my guests and I have tasted. What fun!

Poochie - there is nothing better than sitting on the patio, smelling the sweet soft scent of solvents venting from your new KK sipping some fine bourbon and knowing you're going to be searing some steaks in an hour! And that's just the beginning!

Tony - down in the belly of TheBeast, it's hotter than a forge! If I don't have my welders' gauntlettes on, no hair on the knuckles or arm! Those tongs really do allow for a delicate touch. For deep in the KK, they are wonderful. And I have used them to reposition lit lump.

I never had so much as one pebble lift off when I seasoned both Beauty! & TheBeast. I could smell a little aromatic compound in the air, but every tile was there rock solid.

I have a pair of 16" Weber Style tongs given to me as a gift. Like the OXO tongs, they are very sturdy and I can recommend them's without hesitation. Both are quality products indeed. I also have the Mack daddy of tongs found here: http://www.amazon.com/gp/product/B0002GW25I/ref=as_li_ss_tl?ie=UTF8&camp=211189&creative=373489&creativeASIN=B0002GW25I&link_code=as3&tag=amazi0a8-20 When I have steaks searing deep in the belly of TheBeast, these are my go to tongs. They are long enough that they save my arm hair from being totally flashed off my arm! Wonderful tongs.

Congrats again! Nobody can resist the pebbles of the KK. I'm thinking you had all that hockey ticket money just burning a white hot hole in your wallet and you said "Why not?" Seriously, what are you gonna do with your KJs? With 2 KK 23" Ultimates about to land on your patio, your KJs just became donations, planters, and/or storage. Sounds as if you plan on doing some kind of serious cooking ordering two KKs. I like your choice of accessories. You, on the other hand, are gonna LOVE those accessories! Now the wait begins. All you've done is trade one fever for another!

bosceaux - yet another beautiful cook! Those ribs are just a gorgeous color. Major league kudos on a wonderful cook! But cherry? Bucko, I thought you were a peach wood only these days! Are you dipping your toe in the fruitwood pool? Will we see something with apple wood next? What about something like orange wood? Have you thought about the nut woods, i.e. pecan, oak, almond, walnut? Are you interested in some coffee wood? I've got a bit that I'm shipping to @tinyfish this week and I might as well get you some as well.

In no particular order ... Bread pudding with bourbon sauce and fresh whipped cremé. Coconut cream pie. Warm apple pie a la mode with fresh churned vanilla bean ice cream. Mom's Angel Food cake. She always made hers from scratch and try as I might I've never been able to duplicate it! She'd us it as a base for straw beer shortcake, cherries flambé, baked Alaska, or just simply served uniced, slightly warmed, with a cold glass of milk for an after school snack. That's it. Pretty pedestrian, I know, but I'm a simple guy with simple tastes.
