Geez Louise, Larry! $8.98 a lb.? What caliber gun are you using in this holdup? What a steal! For that price, I'd be buying by the case.
-
I'm hating this stall in a vicarious kind of way! The stall that stalled, huh Rob?
-
Now those are some leftovers I could eat!
-
Burgers and pizza! I've been away from Beauty! &TheBeast the last few weeks and I figure burgers and pizza are about as good as it gets for an easy peasy set of cooks.
-
Poochie - well, I'm in the throes of starting yet another business and time is very tight. I think I'm suffering from the KK equivalent of the DTs! I've gotta pour a couple of fingers of fine bourbon, light some lump, and smell some smoke really quickly!
-
I haven't lit a single piece of lump in over 5 weeks! Between being sick and starting this new business, I've met myself coming and going 4 different times ... this week! Rob - I'm really looking forward to your finished brisket and your take on wrapping. All the best!
-
MacKenzie - another beautiful work of art called a feast for the eyes and tummy! I love the color on that bird and the money shot is simply superb! How you expect to keep outdoing yourself is beyond me, but you're doing it! All kinds of Kudos on this cook to ya!
-
Syzygies - I like the way you're thinking! That single screw through the lid and bottom is an elegantly simple solution. Be sure to use stainless! I can't wait to see this iteration.
-
MacKenzie - I LOVE burgers and I think burgers are about the best food out there! Young Lady, those are some world class burgers you cooked up there on Pebbles! Simply a wonderful cook. Mega kudos!
-
Tony - that's one wonderful looking cook! Touch 'em all and take a bow, 'cause you knocked this one deep into the cheap seats! KUDOS!

Baby back ribs, comparing NC and TX style rubs
CeramicChef replied to wilburpan's topic in KK Cooking
I always serve my ribs dry and ask my guests to try a rib sans sauce before dumping sauce on 'em. Seldom do they go on to ask for sauce. But when they do ask for sauce, I give them some homemade sauce of my own making and a few recipes from cook books, a la Franklin's Manifesto and his videos. -
This should be really good and I can't wait to see the money shot(s)! I'm also looking forward to your take on wrapping. If anyone is a brisket guy, it's you! Rob, if I'm not mistaken, I think this is the first cook I've seen you post. Here's to a great cook with family and friends! PS - I swear I met your twin brother today at lunch! I asked if he had a brother in NOLA who was a geologist/pilot and he said no. You weren't a twin separated at birth were you? LOL!

MacKenzie! Thanks for sharing this. I feel like a proud uncle as a new kid arrives at my Sister' house. Pebbles is absolutely beautiful and warmly ensconced in a loving home! Pebbles has a beautiful view of a gorgeous back yard. Congrats always seems inadequate, but MacKenzie, it's the best I have! I couldn't be happier for you. Atta Girl and welcome (officially) to the KK Club! Now let's get Pebbles properly dirty on the inside with a bunch of cooks!
-
Oh dadgummit all MacKenzie! I was hoping for a new Hanna-Barbera animated series with Flintstones ties. Pebbles and BamBam do BBQ around the world starring the KKs! But, as long as your Pebbles reminds you of wonderful times, tags a very good thing. Pebbles it is! Congrats again. Great story on the Pebbles-pebbles connection!
-
Tony, you're bad! But then I've got Beauty! & TheBeast. Why not Pebbels and BamBam? Good call! MacKenzie, the ball is squarely in your court! When does Pebbles get to play with BamBam"
-
Wilbur - you've hit the nail squarely on the head! High quality ingredients, uncompromising attention to detail, proven technique, that's the way to success! That's why we know our KKs are the perfect kamados. Dennis did the very same things. And welcome to the Never Buy Rub Again club!

Baby back ribs, comparing NC and TX style rubs
CeramicChef replied to wilburpan's topic in KK Cooking
Wilbur - your cooks amaze me. Always great pics to show me what I'm missing down here in OK. Beautiful color on those ribs. Texas or NC style, I'd be chewing on those bones! That is one droolicious bunch of ribs. Major kudos and congrats? -
Syzygies - I bought that book and read it cover to cover. I've also eaten at Franklin's place several times. My buddies and I always hire a doctoral student to hold a place in line and then we fix him p with great BBQ. Everyone wins on that deal. I like your assessment of Franklin's book. I lived in South Texas and Franklin's recipes are pretty standar down there. But, he takes mere salt and paper, garlic, etc to a whole new level. Franklin's book gives a really nice set of insights to Texas Hill Country commercial BBQ. I like you, recommend it wholeheartedly.

Syzygies - your smoke pot idea is pure genius! I've been using it for about as long as I've owned my KK. It solves every single problem with wood placement, where to place, when to place, how much, cleanup, etc. Your Dutch oven solution is just the best! I've given away a few to firms who are really into smoking, BBQ, etc and to a man, they love it! Thanks for a great invention!
-
Charles - I've cooked many a Wabbit in my day, but none as gorgeous as that one you did. Kudos and congrats!
-
MacKenzie - what a lovely KK! Kinda reminds me of my 19" Hi Cap, Beauty! That's a beautiful color on Pebbles! Congrats, congrats, congrats!
-
Larry - an absolutely beautiful back yard. I see the KK is smart enough to find a spot in the shade. When will you be posting more videos? I've always enjoyed them and they played a nontrivial part in my decision to get a KK.
