Wanted to try my hand at Beef Wellington so I followed the recipe and directions in Kamado Wellington Step By Step a post by guru member jackjumper101 The only thing I changed was I coated the meat with A1 Thick and Zesty instead of mustard. http://www.kamadoguru.com/index.php?/topic/25562-Kamado-Wellington-Step-by-Step Beef Wellington served with rosemary potatoes, sweet balsamic brussel sprouts and a Shiitake mushroom sauce. Cook turned out good. Mrs skreef really liked the presentation. Sorry no plated shots as those pictures were really bad.   14. They tasted good just not top of the game for me. Family thought they were great. Of course this is after working a very long 14 hour day and we didn't eat until about 10:00 pm. Charles - Prometheus 16.5", Cassiopeia 19" TT
  15. Pictures from last night's pizza cook. I made a double batch and divided into 3 balls which made proper sized pizzas. I used 00 flour with 4 tsp Vital Wheat Gluten instead of King Arthur AP flour. The first 2 I used parchment paper. For mine I built it straight on a wooden peel sprinkled with Semolina. Hawke's pizza was Shiitake mushrooms and anchovies. Mrs skreef's pizza was Italian sausage and green peppers. Mine was sliced tomatoes, Shiitake mushrooms, Bulgarian Feta (a strange, very strong and moist feta) and fresh Basil. They came out decent. The crust definitely had a softer inside. But compared to using King Arthur AP flour: Didn't stretch as well, Took longer to brown, Didn't have as airy of a crust. (oven spring) I know there are many factors that are in play effecting the outcome and only one test run of the 2 different doughs is hardly enough to come to any serious conclusions. Next batch will go back to King Arthur AP flour and see if my conclusions seem valid. Charles - Prometheus 16.5", Cassiopeia 19" TT

  18. I see no down side to this. It would only be an improvement. As long as it was minimal extra manufacturing cost I can't see why he wouldn't want to do the improvement. In th the past I've actually thought about finding someone who welds SS and getting them to add this to my existing baskets.   19. Are you using the 32" x 1/2" hexagon kit? Then use the KK motor mount and KK motor adapter. I understand you could cut the rod to the correct length. On the left side did you take a grinder to it to make it round? My right side needs hexagon but my left side needs round. Charles - Prometheus 16.5", Cassiopeia 19" TT
  20. It shouldn't effect air flow as these are on the sides not the bottom. Dennis is not proposing changing the bottom only adding more to the sides to keep the lump in the basket mainly when you pull the basket out.   22. Totally needed. That is the one thing I thought needed improving from day one. I dump straight from the bag and stir my lump between cooks never really emptying the basket. Eventually there is a lot of smalls in the bottom. When I finally go to clean out the ash I have to manually clear any smalls from the sides otherwise they sort of get jammed between the side rods and firebox making it hard to pull the basket out. It's an improvement and adding a couple more circles of SS around the perimeter can't be a big cost difference so why would you not want to make the improvement? These type of little improvements is what will always keep the KK miles ahead of other kamados. Charles - Prometheus 16.5", Cassiopeia 19" TT
  23. A glow in the dark needle would be nice. Just a little easier to see from my chair. Of course if I came off a few dollars and got new probes for my maverick that would also solve my want to be lazy problem - LOL Wouldn't want it bigger especially since I own the 2 smallest models.
