  6. Low-n-slow 250-300 Md heat 375-450 High heat searing (CI or grate) 500 minimum Low-n-slow and MD heat always gets a diffuser and sometimes a drip pan. High heat is always direct. Other than that if I'm following a recipe I'll go with whatever temp it says.

  8. Nice. I've never laid out a time line like that. Will be interesting to hear about the time line results and weather you got it right or what you would change next time. My time lines are more like this. "Here drink this, refills are plentiful, diner will be ready in a while." Hours later guests are intoxicated so they can't tell if it tastes crappy anyway - LOL

  14. Most people take their partners on the honeymoon;) But considering you cook in a 10 inch electric skillet..... LOL - Yea I took her too. 1st half of honeymoon was in a cabin.   15. No KK on vacation although I did consider it. I'll take my Akorn Jr. It's a very capable Jr sized kamado. I've taken it on vacation a few times and on my honeymoon. I've cooked just about everything on it except brisket. It'll hold a 7# butt, a decent sized prime rib roast. Can easily get 16+ hours Low-n-slow. Prometheus might be jealous but he'll have to get over it - LOL - if he wasn't such a fattie I could get him in the back of the car.
  16. If I'm planning something for guests or the challenges and it's something new I'll always do a few test cooks just to make sure it's right. My family already knows a lot of what I cook is an experiment so they are always prepared for the worst.
  17. LOL - you all are the best. The responses got me laughing good. I use to do a lot of electric fry pan cooks before my kamado days. With a little imagination I can usually make anything work. I'm going on vacation to sometime around July 10th so I'll be missing the KK for sure but .................. I am taking my Akorn Jr with me and I'll pull off a couple of kamado cooks while away. Of course I'll post them.

  19. I am about to go on vacation so last night I moved the KK into the house. This is my "nothing to do with the grill" cook. I actually used a cheapie $10 electric fry pan - eeeekkk - LOL 1" thick pork Tenderloin Chops done Italian style. Onions, garlic, sweet peppers, Asiago cheese and a marinara type sauce served with angel hair pasta.

  21. It all looks good to me. But I do understand about things not working out as planned. Looked like you pushed through regardless. 1/2 my cooks I consider just barely dog food even when my wife and son love them. Only every once in a while I hit a true home run in my mind.

  23. The stuff I buy is usually located in the grocery store near where the fresh herbs are located. It is whole cloves, peeled and basically packed dry. It comes in plastic bag packaging which contain 6 or eight small vacuum sealed bags each with about 10 + cloves. I have bought the same thing in a jar before but lately I'm getting the bagged version.
