Re: Beef Jerky - I've just been pepper sprayed! All these beef jerky post got me dreaming.. so I made up a batch. Details later but the results were out of this world. Of course made them up quite zippy for my Thai wife who needs her twice daily endorphin rush from Capsicum.. So there was a light dusting with cayenne just before they went in to smoke.. Here I am working at 5 am and grabbed a few pieces to nibble on. Finished them off and forgetting what I had just eaten rubbed my eyes... Argh.. nothing like feeling like I've just been pepper sprayed!

RIP Shotgun Fred.. RIP Shotgun Fred.. It was Fred that helped me set up the Guru faceplate to make using a Guru plug and play. Super nice guy.. was more than willing to discuss the best techniques to fabricate different items in metal. BTW.. In January Fred gave $25 million to his alma mater Sam Houston State University. Re: Alice our new puppy is in the house! I had an Akita for almost 14 years, so I went from dignified and mellow to totally wacky and hyper.. Poodles are just too smart for their own good.. I'm guessing your dog has some oodle in it too.. Alice is sooo naughty I'm sure she thinks her name is NO! -

Re: 23" KK The drastic difference is that your BGE is a simple glazed ceramic pot with a firebox to protect it from the high temps of the charcoal. While the dense mass holds and releases heat it does not contain any actual insulation, where the KK has two different actual insulations which reduce heat loss. This insulation lets you burn less fuel to maintain your cooking temperature, burning less fuel requires less airflow, the result of less airflow is meat that is more moist (imagine a hairdrier blasting/drying your meat for hours) But not only will you meat be more moist but the reduced airflow means that the smoke will spend more time in the grill where your meat is the coolest item. This results in the smoke/vapor condensing on your meat and giving it more flavor. Not that I recommend it because the expansion should be avoided but a KK with large pieces of charcoal to permit lots of airflow can easily bury the needle on a 1000ºf TelTru thermometer and that's in the dome! I know that 700-800º dome is 1,200-1,400 ºf in the charcoal. I have a grill that we filled with charcoal and then blasted with a large leaf blower.. It went well past the 1,800º the thermocouple was capable of recording. Flames shot out the top and more than 1" of material was glowing.. The refractory hot face is rated for 2,200ºf That was about 7 years ago and It is still being cooked on by my security Yes, it's the width and the across from the back corner to the opposite front corner.

Re: New Leg-less Komodo.. This was the first one we did.. and was going into a built in corner with a wall, so they would not be seen. I was not happy about the washer being taller also but it was hidden and so it went out like that.

Leg-less Komodo.. For those who choose to build in their KK. This Stainless base will prevent the refractory material from wicking up moisture. The small legs keep it from tipping over. ;) n68402 n68401 n68403 n68404 n68406 n68405

Some people mentioned that they used the discontinued Roti cradle eagle claws to lift hot grills. I knew that I could do better for this new application. So here is my new design.. they can be twisted either direction, lock in and work very well. n68399 n68400 n68398

Re: MY NEW KK!!! Close the lid.. Heat of course rises and leaves the damper top.. this causes vacuum which sucks air thru the lower draft door. All of this air is forced thru the charcoal. If you want to speed things up, my favorite tool is a cheapo hair drier blasted down onto the charcoal. Your KK does not really need any help with airflow.. Temperature only airflow and fuel. Always remember to shake out last cooks ash and don't dump[ the smalls from the bottom of the bag dead center. This will clog things up.

Re: MY NEW KK!!! You can't screw it up.. there is just the chance of getting a bubble in the insulation/grout. You came thru unscathed. But those lower temp 350-400 cooks do nothing.. The outside does not get hot enough to do anything. It's gotta be 475-500ºf

It's best to light the charcoal on the top of the basket because it burns down.. if you light the bottom the new fuel needs to continually tumble down onto the burn. It can actually run out of fuel with a full bowl sitting above it. You really only need to light about a tennis ball to grapefruit volume.. then let it creep up rather than light more and cut it's airflow back to the desired temp. -
