    Side tables

Re: Side tables Yup.. I've sent the final prototype out to the stainless job shop for the quote and to build the first 18 pairs. Everybody who wants the new side tables will need to send me a photo of their side plate.. I have had a few different versions in the last 4.5 years.. Do you have pricing info?
  8. Alton Brown has a Chili recipe for the pressure cooker....I have cooked it several times....very yummy!! 3 pounds stew meat (beef, pork, and/or lamb) 2 teaspoons peanut oil 1 1/2 teaspoons kosher salt 1 (12-ounce) bottle of beer, preferably a medium ale 1 (16-ounce) container salsa 30 tortilla chips 2 chipotle peppers canned in adobo sauce, chopped 1 tablespoon adobo sauce (from the chipotle peppers in adobo) 1 tablespoon tomato paste 1 tablespoon chili powder 1 teaspoon ground cumin Place the meat in a large mixing bowl and toss with the peanut oil and salt. Set aside. Heat a 6-quart heavy-bottomed pressure cooker over high heat until hot. Add the meat in 3 or 4 batches and brown on all sides, approximately 2 minutes per batch. Once each batch is browned, place the meat in a clean large bowl. Once all of the meat is browned, add the beer to the cooker to deglaze the pot. Scrape the browned bits from the bottom of the pot. Add the meat back to the pressure cooker along with the salsa, tortilla chips, chipotle peppers, adobo sauce, tomato paste, chili powder, and ground cumin and stir to combine. Lock the lid in place according to the manufacturer's instructions. When the steam begins to hiss out of the cooker, reduce the heat to low, just enough to maintain a very weak whistle. Cook for 25 minutes. Remove from the heat and carefully release the steam. Serve immediately. Homemade Chili Powder: 3 ancho chiles, stemmed, seeded and sliced 3 cascabel chiles, stemmed, seeded and sliced 3 dried arbol chiles, stemmed, seeded and sliced 2 tablespoons whole cumin seeds 2 tablespoons garlic powder 1 tablespoon dried oregano 1 teaspoon smoked paprika Place all of the chiles and the cumin into a medium nonstick saute pan or cast iron skillet over medium-high heat. Cook, moving the pan around constantly, until you begin to smell the cumin toasting, approximately 4 to 5 minutes. Set aside and cool completely. Once cool, place the chiles and cumin into the carafe of a blender along with the garlic powder, oregano, and paprika. Process until a fine powder is formed. Allow the powder to settle for at least a minute before removing the lid of the carafe. Store in an airtight container for up to 6 months.
  9. RETIREMENT PLANNING FOR 2008 If you had purchased $1,000.00 of Nortel stock one year ago, it would now be worth $49.00. With Enron, you would have had $16.50 left of the original $1,000.00. With WorldCom, you would have had less than $5.00 left. If you had purchased $1,000 of Delta Air Lines stock, you would have $49.00 left But, if you had purchased $1,000.00 worth of beer one year ago, drank all the beer, then turned in the cans for the aluminum recycling REFUND, You would have had $214.00. Based on the above, the best current investment advice is to drink heavily and recycle. The plan is called the 401-Keg. ________________________________________
  10. Johnnyboy: do you think standard cover will fit if you only have one side table? Dennis: Will a 50lb roti motor fit? Looks like you have the battery operated version in the picture...the stainless steel motor is a little larger.

  14. WOW! That drip pan is sweet. Would be nice to have one for my prehistoric version of the OTB. How much??
  15. Yep! Works pretty good.
  16. Yes it is a Stoker and it works great. I'm a 'geek' so I love being able to connect it to my wireless network and access it from my laptop or from the office.
  17. Cooked at 220. I cooked two butts...about the same size. I didn't check the weights before cooking. The butt on top rack reached 190F at 14 hours and the butt on main grill reached 190F 16 hours. I usually expect the butts to take up to 18 hours. I had the KK fired up and at temperature for 30-40 minutes before I put the butts on. Once you put the pork on the grill...DO NOT OPEN THE LID!!! I have found my best low and slow cooks are the ones that I just leave alone....anyway...just my two cents. It was yummy! Made up some vinegar sauce and some southern cole slaw to go on top of the pork sammy.
