  1. In between shoveling and snow blowing after yesterday's snow storm I managed to make 3 dozen pretzel bites. They are addictive.

  11. Made a Khachapuri this evening. Had every intention of baking it on the KK but when I went outside I thought better of it. We are at the beginning of another major storm and this is not a quick cook as I needed to heat sink the KK to 425F. Came right back in the house and forgot that idea for this time. I precooked the mushrooms and red pepper. Mixed 4 oz on Monterrey Jack and 4 0z of Provolone with a beaten egg. Put this mixture on an oval shaped pizza dough. Folded the edges up and twisted the ends. Bake @ 425F for 15 mins. Then coat all over with an egg yolk/water mixture and drop an egg on top. Cook several more minutes until the egg is set. Cut. Plated.

    I took another stab at the SV method for eggs. 167F for 13 mins. Then plunged into boiling water that just came out of the microwave. Left the egg for 1 min. then ran it under cold tap water for several seconds. The white was more firm and I had no trouble eating it with a fork, the yolk was partly running and partly creamed. I will probably do the same tomorrow but change the 13 mins. to 12 mins. My eggs vary in size because I get them from someone down the road. They are very fresh but certainly not graded.

  17. Look at what the crazy European Starlings do in my yard every day, pix is not great I had to shoot thru the kitchen window. If i come out of the house they would fly as soon as they hear me.

    Tony, I don't think 10 mins is long enough, maybe 12 mins and then 1 min. in boiling water to set the whites. :) Then the cold water.
  19. Syzygies, I have heard this before but can you give me more details on what hot liquids to do a chamber vacuum sealer please? Thanks. I know that once the pressure is lowered that the hot liquid will likely boil but if it can be contained in the bag is there still a possibility that damage can be done to the machine itself?
  20. I just received box of 1000 of the 4mm, 10x13 and you certainly can feel the difference between these and the 3mm. I fall into that wash and reuse category too.
  21. dstr8, you must have had a ton of fun making that lasagna and it looks wonderful, moist and tasty.
  22. Tony, In the first pix it looks like those racks of ribs are praying, "Please let this recipe work and make us delicious." From the rest of the pixs it sure worked because those ribs look awesome.
  23. Here comes the Paprikash, thanks to Tony. As you can see, Tony, I added mushrooms to the recipe. I also used 1T hot paprika and 1T sweet paprika.
