  2. You can always use a Frog Mat if you can't find the stainless steel mats. They are good for up to 400 F. I've owned one for many years and it does come in handy, especially for doing Baconators (aka Fatties). http://frogmats.com/
  3. Living in the land of piggies, I can get Berkshire pork from the butcher at the local Farmers Market pretty much anytime I want it. He likes to specialize in heritage animals. The Red Waddle bacon is just amazing!
  4. @DennisLinkletter - dying to see pictures of that cook!!
  5. Nailed that one! Amazing looking crackle!
  6. Yes, we have Kurobuta pigs here in the States. You can order it from Snake River Farms. http://www.snakeriverfarms.com/kurobuta-pork.html

    Food porn Rib Steak

Dude, that steak cook is just sick! Not familiar with that wine style at all. Any tips?
  8. Do you know what variety of pig this came from?
  9. Nice, but where's the eggs - a breakfast casserole without eggs?? Next time, crack 4 eggs on top of that casserole with about 2 minutes left in the KK. WINNER!
  10. Dude, that plate is just wicked!
  11. Nice pizza! No worries on the venting. Just let it rock on until it stops oozing/smelling. Like Robert said, press the tiles down as it's cooling down. Give it a 100F cooldown and then try and push the tiles back on.
  12. Sounds yummy. Will ask my butcher if he can get me one.
  13. The best way to achieve this is to cook the pizzas on the upper grate. That way you get the direct heat on the toppings from the grill dome, while the stone/steel underneath browns the crust.
  14. This past spring my old GE side-by-side started acting up (it's 8 years old) - it wasn't the $7000 model by any means. Started shopping for a replacement and I went with a Samsung with the French Doors. It only has the one full width shelf in the fridge for Deli, etc. That's where I keep cheeses and meats (bacon, sausage, deli, etc.) I'm much happier with the new fridge than the old one. The side-by-side was too narrow in both compartments - couldn't fit big stuff in the freezer side, the ice maker took up 1/3 of the freezer area, and I had trouble getting larger dishes in the fridge side, like for marinating larger cuts. My old GE did have the special bin in the bottom of the fridge side that you could set the temperate in to either flash freeze or defrost in it. I don't think I ever used the freeze part and only on occasion used the defrost function, as it would wake the dead (LOUD fan running noise). I don't seem to have any difficulty defrosting meat in the Samsung in the regular refrigerator area. YMMV
  15. I'm fortunate that I can get Rockwood at the local BBQ store.
