Roasted Peppers and Peaches with SV Eye of Round Dinner

Sweet red peppers that I've enjoyed before so much that it just had to be done again.

 

 

Done.

 

 

Along with the peppers I roasted a peach. Ready to grill.

 

 

On the grill. I didn't use a whole lot of lump as this cook was going to be with the lid open.

Served with some homemade vanilla bean ice cream and Nova Scotia maple syrup.

 

 

A sandwich with SVed eye of the round, cheese, roasted pepper, lettuce and sourdough bread. Served with a helping of fries.

Seriously Awesome, MacKenzie. That view is just spectacular! 

 

And, it doesn't get much better than grilled peaches and homemade vanilla ice cream!

Looks outstanding as usual. If you'd like to add another dimension to those peaches, dip the cut side in butter and then into brown sugar. When you grill them the sugar will caramelize and make 'em extra yummy.  Beautiful sunset too. I'd watch it until the stars came out.

I use Dizzy Pig's Pineapple Head rub - basically demerara sugar, cinnamon, etc. It does have some chiles in it for just a bit of bite to cut the sweetness.

Pineapple Head is such a great seasoning.  I love it and think it would be delicious with fresh grilled fruit
