  1. Ooooh. Yummy looking cooks all round. Making me salivate! Your daughters look so proud @Troble. It is great to have this time with them and even better that they are learning to handle dough so early in their lives. I keep thinking that I should get into the habit of just making and playing with dough every week, just to start to get the feel and confidence that real bakers have. Football cook this weekend owed a lot to the forum. Small stack of chicken shawarma and a couple of octopus legs, both marinaded in @Troble's al pastor marinade. Chicken drumsticks using rack from the KK shopping channel with Yardbird Rub as recommended by, I think, @C6Bill or @tony b. Smoked with pecan wood chips in @Syzygies smoke pot. Delicious and kept me going through the whole weekend of games. Fly Eagles Fly!

  2. After 3 weeks of rain decided to make some pizza with my girls this weekend. This time we stuck to the usual NY style pizza crust. They helped me make the dough Friday and then make the pies and toppings today Brushed the crust with olive oil and sprinkled sea salt and garnish powder on the cultist. Turned out great Two pepperoni & sausage pizzas and one with bell peppers, black olives and pepperoni

  3. Sunday rack of lamb, marinated and hit with a SPG. Cooked on the very bottom over the fire to sear then smoked up to temp away indirectly while small potatoes were cooking over the fire. Plated with Zucchini sprinkled with Parmesan.

  4. Everyone's cooks look delicious. Pizza's, Lamb racks, octopus, I need to get busy. Today was cheese smoking day. I had so many requests from my kids, grandkids, in-laws, outlaws, and neighbors. The mailman even hit me up last week for some. 10 lbs of Xsharp, sharp, swiss, jack and pepper jack ready to go . 1.5 hours. Komodo Kold smoke generator worked like a champ.

  7. Thanks a lot Tony! Turns out a neighbor of mine has a set of utility ramps for a riding mower, so I’ll be borrowing those and maybe putting a sheet of plywood across them. I’m hoping that those, in conjunction with the pallet lid, should be enough to get the KK where it needs to go. I will absolutely be taking plenty of photos to post!

  8. Yes, I built a ramp for moving my 23" KK up the 8 steps in my house to get the KK from the garage to the deck where it lives now. I used 3/4" plywood. I made support brackets out of 2x2's for the top step, so the ramp was flush with the floor. The ramp itself lay on the steps for support. Because of the steepness/angle, it took 5 of us to push/pull it up the ramp (3 pulling with moving straps and 2 on the bottom pushing). And we took off the lid first to lighten the load. Your KK will be heavier than mine, but you don't have as difficult a ramp to navigate. Good luck and send pics!

  9. Feeling a bit rusty with this after 12 months without a KK. I It took me a couple of goes to get the KK lit, the crust didn’t rise so I expect my yeast may have deteriorated?? It ended up ok, not great, but ok. Still, it was enjoyable to potter around lighting the fire and prepping the crust……. And plenty of scope to do improve. Sent from my iPhone using Tapatalk

  10. The store opened in January; it's name is actually US Chef'Store. I'm disappointed in the prices for supplies and tools but they have some pretty good prices on some fresh and frozen meats and some very good prices on others. They also have some meat cuts I've not seen locally before. Prices on deli meats and cheeses are pretty good too, but you do have to buy the chunk and not slices. Some example prices on fresh meat: Whole chicken wings: $42 for 40 lbs Chicken wing drummettes and flaps: $47 for 40 lbs Chicken drumsticks: $23.55 for 40 lbs Whole chickens: $1.69 lb Beef brisket: $2.65 lb Prime beef brisket: $4.39 lb Beef eye of round:: $3.75 lb Beef shoulder clod: $3.55 lb Ground chuck 81% lean: $2.55 lb Pork butt: $1.29 lb They also have prime grade brisket and other beef loins at competitive prices. Local grocery stores have pork butts on sale pretty regularly for 99¢ lb but I don't know if there's any quality differences.
