  1. Larry, has an older K7 so there is no latch like on a KK. Larry, I think you started with your dampers set too high and let it come up too fast. When I did the low cooks (I never really thought it necessary to be under 250) the bottom damper was only ajar a sliver, and the top barely open as you described. I'm not familiar with the fuel product to comment on its properties or whether you started too many. I will say in the beginning I had trouble getting it low enough just because you don't think 3 or 4 pieces are enough to get to 250. You'll get it, allow plenty of time to react to an adjustment, other wise you will overshoot the target temp, and it takes forever to lower the temp once it is heat soaked.

  4. Actually my sister was buying the 264 lbs of tri-tip. She had a rather large event at her home. I try not to know that many people! I understand they ended up not cooking about 50 lbs....They have that in the freezer. Maybe we will have that instead of turkey for Thanksgiving!
  5. yeah, guess I missed the s on lb. Oh well, maybe I wanted everyone to think we really grow them big here in Ca. I am told the Wagyu cattle do get considerably bigger, but not that big.

  8. wow...now everybody knows how to get your goat. Just because people purchase a nice BBQ doesn't mean they don't appreciate a bargain. No need to politicize it, we are a BBQ forum. As I recall you said it didn't get your goat when the tiles fell off your K7 because you got if for a bargain price.
  9. Quite clearly, it is working for you. I never thought about food grade buckets until we started buying them recycled.
  10. Sys...I recently channel flipped into some reality show where a principal gave the students a choice of the paddle or detention. The point is the students chose the alternative punishment and they intentionally did not make it easy. I'm going to guess that the parents had to agree considering this was a current show. They did have a girl choose the paddle, but I did not watch the whole show to see her response.
  11. The important point Larry is it is incredible and affordable, and I thank you for that tip...pun intended. I saw untrimmed tri-tip the other day for $3.78 lb. I'm kinda glad the rest of the forum doesn't live close by....they'd be driving up the price! On another note, my sister recently hosted a special occasion and ordered her tri-tip from Costco. It was Black Angus tri-tip and it was very good. 264 lbs of un-trimmed tri-tip for $725.00. The guy who BBQ'ed cooked it somewhat slow, almost 2 hours, on an open trailer BBQ. It was excellent, tender, and nice pink in the center. My point is the Black Angus tri-tip is also very good.
  12. Only thing I might suggest is using a food grade bucket from Smart and Final or if yu can find one from a restaurant or food manufacturer that buys a lot in 5 gal buckets. For instance we used to get buckets from Ice cream factories. Better yet, I will sell you 5 gallons of olive oil and you will have a food grade bucket.
  13. Larry, I got the double pack in a cryovac that had SnakeRiver Farms prominently on the front. My guest knew the label as he is in the cattle and meat packing business. I will be returning this week to re-stock. There were a few single pack tri-tips that had been seasoned and re-packed in the styrofoam tray and saran wrap, but I did not look at those closely. I saw the New York Stle sausage brand at SaveMart, but not the roasted pepper, carmelized onion. I do have a friend that is a meat manager at my local SaveMart and I will ask him to get it for me. I have tortured several friends with the description and promis to make when I get the sausage. I definitely think that is a way to a few men's hearts (literally arteries might close up). I did buy the Vino and Formaggio sausage, but have not used it yet.

As long as we are in the appropriate thread DJ doesn't seem to be easily offended. No need to worry about the nuns on this forum.

    I still have some of the RJ Klump (its not the original stuff, but a least it isn't moldy). I frequently mix that with my lump as I try to use it up. I thne will get some material from Dennis...Larry and I can probably share a pallet. Heck as much as he cooks he might want a whole pallet
  18. It must be the Jersey surcharge. I guess they like Larry and Trish better Actually there is a meat shop called The Meat Market http://www.themeatmarket.com/ They sell traegers there as well. I'm hoping primeats can tell us a little more about the SnakeRiver product. Next time I'm going to see if they handle the Berkshire pork, which is also produced by SnakeRiver Farms. Wait to you see Larry's Fatties (ok that does sound like I know him really well). It is a large sausage patty rolled around pepper jack cheese and seasoned. then slow cooked. Larry...I still haven't been able to track down that particular sausage. I can find the brand, but not the flavor. I will either have to go your way or have a local order it for me. Johnnyboy....Larry has the Kover you made for the K7.
  19. Hi Larry....glad you made it. Don't sell yourself short, I have seen your Kooking pictures and you are doing very well. Larry purchased my K7 and sent me a tremendous amount of food porn just from the first week. As I recall, he did Wagyu tri-tip, fatties, stuffed portabellas, chicken, brisket and porkchops. He also told me where to buy the Wagyu tri-tip (Snake River farms) for $5.99 lb, trimmed. It is awesome stuff. I just cooked it tonight again for company Larry. Larry clearly has been BBQing quite awhile and he is an accomplished photographer as well. Larry I have been waiting for you to post and show the tri-tip as well as other things. Primeats....what can you tell us about Snake River Farms Wagyu tri-tip? I understand they also produce Bershire Hogs. Welcome Larry.

  24. I think it also should be noted that Dennis spend a great deal of time (about a year as I recall) trying to locate the best product before adding charcoal to his offering. He clearly stated he wanted the best, and when he found the product sent it to Whiz for an opinion. Whiz is correct about the Kompetitor's Klump. When informed the Klump was not the quality of the original batch, RJ attacked the messenger (Whiz and the Kustomers) instead of making things right to his Kustomers I don't think it compromises the review process at all, but I think it demonstrates Dennis' committment to be honest and to offer the best.
