    Ribs

I'm liking that rib cook, Aussie!
  2. Very nice indeed. Excellent virgin cook. And the 2nd dog looks sweet, too. However, withholding yummy KK scraps from them is just cruel, especially after they had to smell it cooking!
  3. to both of you for really tasty looking cooks!

    Brisket

Depending on what temp you're cooking it at, I'd plan no less than 12 hours, more likely 14 - 16 for an almost 13 lb full brisket.
  5. I fear a "Bosco deja vu" all over again!
  6. Hoping that sanity will prevail before things get too out of hand. Our silly government wants to start trade wars with EVERYONE it seems.
  7. You both are cruel. I'm with MacKenzie, the cute pooch saves him this time!

  9. Welcome to the Obsession! We can't wait to hear how you get it into its final resting space!
  10. @tekobo - you'll just have to roll with this one (pun intended!)
  11. Almost time! We're eagerly awaiting those delivery and uncrating pics!

That's an odd place to keep your BS? Oh, wait, you meant Baking Steel!!

    Griddle?

I got this one last year, fits nicely on the lower grate of my 23" for smash burgers. Covers 2 burners on my indoor stove. https://smile.amazon.com/gp/product/B002CMLTXG
  15. I got the locking nuts for mine when they came out. No worries about the gas door leaking anymore! Especially since I like to push the ashes up against it, which in the past caused some leakage.
  16. Yet! No predicting the future, Charles, especially when adult beverages are involved!
  17. Nice looking chook, but how did you like the Old Bay treatment on it?

    Picanha

I took about 1/8" off my spit rod with the Dremel so I don't have that problem anymore.
  19. Will add it to my shopping list while on the Bourbon Trail next month.

    Temps

Yes, with enough time to equilibrate, they get pretty close to each other (within 20F). A little more deviation at higher temps due to more airflow through the top hat.
