Paul Posted March 8, 2017 Report Posted March 8, 2017 Aussie's pork roast looked so good I had to do one myself. Came out awful!! Tough as nails. I'm not sure if I did something wrong or if it was just a tough piece of meat. In the KK at 325 to an IT of 160 and rested for about an hour. The artichoke was tough also. tony b Posted March 9, 2017 Report Posted March 9, 2017 I see who's inheriting that KK, Paul! He's definitely a BBQ junkie. An IT of 160F might have been a tad low. I cooked my wild boar rack to 180F and they were a tad dry, so maybe the sweet spot is 170F?? 1 Quote
