MacKenzie Posted August 28, 2015 Report Posted August 28, 2015 I over worked today and didn't have the energy to do much for dinner this evening so sat in my chair while the KK cooked some chicken sausages very slowly. Temp. was about 275-300F. Near the end did some fries. The sausage were very moist and tasty.
Poochie Posted August 28, 2015 Report Posted August 28, 2015 Looks like a winner dinner to me. Those fries weren't done on Pebbles, were they? If so, how did you get them so golden and crispy looking?
tinyfish Posted August 28, 2015 Report Posted August 28, 2015 I could eat that every night looks wonderful.
MacKenzie Posted August 29, 2015 Author Report Posted August 29, 2015 Looks like a winner dinner to me. Those fries weren't done on Pebbles, were they? If so, how did you get them so golden and crispy looking? No, Poochie, they were deep fried frozen fries;)
PRippley Posted August 29, 2015 Report Posted August 29, 2015 I know that feeling of desperation MacKenzie, yet your dinner hit the table looking fine, and tasting even better, I am guessing!
kjs Posted August 29, 2015 Report Posted August 29, 2015 Winner, winner chicken sausage dinner. Looks delicious. I like your posts and really appreciate your photography, good job!
ckreef Posted August 29, 2015 Report Posted August 29, 2015 Quick, simple dinner - nothing wrong with that.
CeramicChef Posted August 29, 2015 Report Posted August 29, 2015 MacKenzie - winner, winner chicken sausage dinner. Killer money shot! Kudos! Hey, did you make the chicken sausage like you've done with pepperoni!
bosco Posted August 29, 2015 Report Posted August 29, 2015 nice cook!! What do you use to cook the fries on the grill?? I have used cast skillet in past, but struggle with temps to get the fries just right
MacKenzie Posted August 29, 2015 Author Report Posted August 29, 2015 Thanks heaps everyone:) I didn't do the fries on the KK, that's living dangerously for me, they were done in de Buyer pan on top of the gas stove;) Yes, I made the sausages and that was the last of them so I need to put that on the to-do list;)
CeramicChef Posted August 29, 2015 Report Posted August 29, 2015 MacKenzie, that's one beautiful sausage. What did you use for the fat you mixed in?
MacKenzie Posted August 29, 2015 Author Report Posted August 29, 2015 MacKenzie, that's one beautiful sausage. What did you use for the fat you mixed in? I believe I only used chicken thighs so lots of fat there. That was the first batch I made but I will do more:)
CeramicChef Posted August 29, 2015 Report Posted August 29, 2015 I believe I only used chicken thighs so lots of fat there. That was the first batch I made but I will do more:) Thanks, MacKenzie! All these great sausage pics and cooks you've posted have about convinced me that I need to look into making sausage. I'm thinking I'm off to Amazon for sausage books.

CeramicChef Posted August 30, 2015 Report Posted August 30, 2015 Tony - you're killing me! You're aiding and abetting the draining of my bank account. The books are the cheap part! Now I have to go buy a grinder, a sausage funnel, casings , etc. I figure that first sausage is gonna set me back about $450! Of course, after that it's all marginal costing, but still .... Thanks for the pointers. Those look like good starters for me.
MacKenzie Posted August 30, 2015 Author Report Posted August 30, 2015 $450, if you are lucky but who is counting;)
