Chicken Enchilladas

Started this by making a batch of tortillas.

Mixed up some cooked chicken with sour cream, enchilada sauce, canned green chilies, cumin, parsley and a hot pepper cheese.

Tortillas all rolled up and ready to be dressed with enchilada sauce and green chilies.

and on the grill at 350F for 25 mins.

Hot Pepper cheese added about 5 mins before the end of the cook.

I almost forgot, while the enchiladas cooked I tasted Guinness Blonde for the first time, not bad better than I thought it would be. :cheers:

Another killah, MacKenzie! The melted cheese shot is pure food porn!!

 

Guinness Blonde is decent. Not a big favorite, but I'll drink it in a pinch!  :occasion5:

My Mexican grandmother made tortillas every day. It's not difficult, it's really easy, but it's time-consuming that's the problem. But if you make them with pork lard instead of Crisco oh my think you died and went to heaven.

OK, I am going to retract what I just said. I just made a batch of homemade flour tortillas and it really was not that time-consuming at all so it's definitely worth doing. I had smoked a pork butt on Saturday so I took some of that pork meat and sautéed it in a cast iron skillet with some butter and some rub and then use that to make tacos with the flour tortillas.
