  1. Tomorrow is going to be the first nice day (no rain) I've had off of work in about 3 weeks. With that thought in mind I decided to take my lunch break today at Lowes. By this evening I should have everything together so I can pour my footer/pad tomorrow. We might finally make some serious progress.

  2. Finally catching up on some posts, been a busy week, plus the Forum glitch didn't help either. Did some beef ribs for a buddy this week. Came out great. On the KK with guru @ 265F, indirect with hickory, apple and oak chunks in the smoker pot. Plated with mashed cauliflower and grilled asparagus. Did a couple of other nice cooks this week, too. Scored some amazing double cut pork chops. Store had some corn (probably from FL), was OK for this early in the season. Also a batch of Cornell chicken, seeing as a friend wanted to learn how to make it. Have a great weekend!!

  6. Aussie, I give my mechanic a bonus each year at Xmas to a nice restaurant in the area for him and his wife, always pays off. Do you do this with your butcher? I always tip him, he likes home grown, it's all legal now and well appreciated.

  16. Skirt Steak Fajitas tonight, first time I’ve fired up “Charlie Murphy” this year. I didn’t have my sharp knife and skipped the silver skin trim...bad move, too chewy [emoji20]

  17. Cold smoked some salmon today. Cured it in brown sugar/salt mixture for 4 hours before hand then cold smoked for 2.5 hours. Lit the KK, let it slowly come up to smoking temp of 250 over the next hour, and then cooked for one more hour to internal temp of 140. Served with a sweet maple soy sauce, smoked cauliflower and a side salad. I’ve only cooked fish a few times on account that my family typically doesn’t care for seafood (not a big fan of fishy flavor). We wanted to try something different. By far the best salmon I’ve ever had, but still not my favorite thing to eat by a long shot. I’d rather have shrimp, grouper, or tilapia, but still it was pretty good.
