  3. Above pictures are a scaled down version for 2 people.  This is a really good recipe. Easy and almost impossible to screw it up. Serves 4 to 6 people. Easily scaled down for 2 to 3 people. 2 pounds fresh zucchini (3-4 medium zucchini), cut into 1/8 inch rounds.  1/3 cup thin sliced (or diced) sweet onion. 2 Tbsp Mild olive oil. 1 tsp herbes de Provence 1 tsp kosher salt  1 tsp fresh ground black pepper 1 cup fresh grated Gruyere cheese (or any fresh grated hard cheese) Combine the above ingredients in a bowl. Oil a ceramic baking dish and add zucchini mixture. 4-6 md plum tomatoes (or Roma tomatoes) cut into 1/4" rounds  Lay the tomato slices overlapping to mostly cover the zucchini. Bake uncovered, indirect at 400* for about 40 minutes until top is bubbling lightly and tomatoes are slightly charred. Let rest for 5-10 minutes before serving. Note: this dish will soak up a lot of smoke flavor so try and burn a clean fire (unless you want it Smokey). I warned you.

  4. A small simple meal for me and Mrs skreef. (Delivered Hawke to college today). 400* indirect with the firebox divider installed. Cornish Game Hen on the right with drip pan below. Zucchini Gratin on the left side. (cooked this dish in the WFO this past weekend, wanted to try it in a kamado). What you don't see is 3 small baked potatoes under the heat deflector on the left.  For first cook on the Oval Jr it was a total success. Very pleased with myself. The Zucchini Gratin is becoming one of my favorite vegetable side dishes.

  6. Found an interesting, zero waste approach to starter maintenance called No Muss No Fuss. My NMNF stiff starter is on the left, and my levain build on the right: Where there is levain there must be bread. Here’s my steam oven doing what it does...steaming. 40’ish minutes later: And the crumb...nigh upon perfect: And with that post I bid adieu for awhile. Every so often I take stock of how I’m spending time online and make corrections, reducing or eliminating participation on various sites. This time around I’ve deleted FakeBook and am reducing my forum footprint. Will continue posting cooks at Amazing Ribs and on Instagram with the #komodokamado hashtag (or follow me directly at @dr_jpr if you dare...), but reducing other BBQ forums as redundant.

  12. Nice little tailgater you have there ckreef, one more toy in the arsenal. I'm looking at the barrel cookers myself for my next purchase but that little primo does have some open options on the menu plan. A stick burner now, that's the way, fuel is free and you wash it out with a garden hose, just sayin.

  13. I doubt I'll sell the Akorn Jr. I understand grill equilibrium but I've just now hit the plateau - maybe. When I finally get a 42" I'll get rid of the 14" Akorn Jr to maintain equilibrium - that only seems fair If the right person comes along I will give them my old small Yakatori grill. I doubt I'll ever break that out again.

  18. Thanks.................Check out the story below: There is a back story on the name "Old Dog"...........................a good friend of mine, Robin and I co-owned a little 8 lb. Yorkie pup. Jasper. He was a great boater and loved to drink beer. If you put your can down, he would finish it for you. One day, after an afternoon on the water with one of my buddies, his co-owner Robin came to pick him up. When she picked him up in her arms and smelled beer on his breath (I guess we didn't watch him that close),........she started giving my buddy and I the business. At the same time, both my buddy and I said "Bad Dog!!!!!". Robin was not amused but we thought it was hilarious. The next summer I bought a new boat and the re-naming process began. Below is the name and logo the family voted on. Sadly, this June at 15 years old Jasper is no longer with us. Robin, family & friends all agreed that the new name and logo (artists rendering of Jasper) was perfect for the new/old boat. Hopefully in a few weeks, they will be docked next to each other

  19. AMAZING!! That's all I can say! One tip - next time swap out the vodka for white rum and add a splash of club soda instead of the water - mojitos! Or if you can find cachaca (Brazilian rum), go for the caipirinha.
