  3. I will add..the kk is so efficient, it’s airflow is so low, I believe this is the reason foil isn’t needed. I can’t tell you how many times there’s a puddle of liquid below the lower draft door during a lo/slo cook. Sent from my iPhone using Tapatalk

  4. Your Grandmother must have loved you! Every year, I buy a few boxes of gooseberries and get friends to help with topping and tailing them so that I can cook them up and freeze them for use in the depths of winter. Every year, I tell myself, never again. It is such a boring job! But I do like the taste of gooseberries. Around Christmas last year, a friend offered me some MORE gooseberries - from her freezer. It turns out that she had simply frozen them whole. It was a very easy job to snip off the ends with a pair of scissors, cover them in sugar and put them in the pie case. Mixed with some of my stewed gooseberries, they tasted really good as long as you avoided the charred base! Next time I won't be lazy - I will put a rack in higher up and will use my thick lodge skillet to shield the pie bottom. Oh yes, and I will check on the pie after ten minutes, not twenty!

  8. Really loving having solid data to tell me how to refine a shot. The first pic is the same as above. Ground too fine, flow nearly choked, and pressure shot way over any reasonable target. Over-extracted. Loosened the grind just a tad, and suddenly all is right in the world. Snickers bar in a cup. Someone at the Decent Espresso forum posted a profile for a Londinium R that they claim is a near perfect replica of that machine (they have one for side-by-side comparison). Looking forwarded to trying that since I've always wanted a Londinium R.

  13. I made up a mixture of apple sauce brown sugar, passionfruit juice and bourbon. And injected my butt lol..I then gave it some pinneapple rub.Looking good Thought I would give it some sauce..not far off can't wait yum. Outback Kamado Bar and Grill

  20. LOVE New Orleans in particular and Louisiana in general. We lived in Baton Rouge and New Orleans (my wife was state head of Public Health and they had their offices in the CBD, so we kept an apartment in NO for four years). We go back every few years for a week to eat (went for anniversary two years ago) and I always think that you have to diet for a week before and a week after a week in New Orleans. I go down to Lafayette every year for the Festivale Internationale (Jazzfest has gotten too big!). Elizabeth's in Bywater is a favorite place. (Also lived in Shreveport for 8 years, though there is some debate as to whether it is really Louisiana or East Texas.) However, the difference in humidity levels down there and Salt Lake/Denver might have something to do with whether foil-wrapping is less necessary for the ribs down there. Geaux Saints! ( We wuz robbed!)

  26. So, this happened a couple weeks ago, as I tried to find shelter from the rain on an early Monday morning... What a way to start the week. I'm guessing a few people on this board have some ideas as to what I should do next??
