  1. I knew this chili was hot hot so I thought I'll fix that I'll bake a sub bun and put the chili in that. The cheese was previously smoked on the KK that will add a touch of goodness.

  5. Thank folks. I cooked at 300f for a few hours until internal was 160f. Then cranked up the temp to 500f but still couldn’t get the crackling to form. Hit is with my MAPP touch and it came up fine, but I feel that was kind of cheating. Overall, it tasted great. Here a few pics when it first went on.   6. Beef came off the komodo 3 hrs ago looks ok taste a little salty but the pepper and smoke is delicious

  8. Followed several folks' suggestions here to make a batch of chili with leftover brisket from my last cook. This turned out to be the "meaty-ist" chili that I've ever made! And, of course, being REAL chili, there were no beans to be found anywhere in the vicinity!

As always there are many different ways to cook something and most will return great results in a KK This is how i cook porchetta in the BB32 Pat dry before seasoning Baking powder in the seasoning to help crisp Let sit in fridge wrapped in pink butcher paper 10 to 12 hours to draw moisture out after seasoning Direct on rotisserie Add drip tray 20 to 30 minutes in, or once it flares up 385 degrees until 115 degrees internal temp Then raise temp to 500 for 20 minutes to crisp The internal temp will carry over to 145 or so while crisping

  10. Forgot to take pics while cooking but here is the finished results. I like to cook duck breast on the KK then put it out on a board with grapes, tangerine, nuts, cheese + crackers and of course some chocolate

  13. First pizza cook on the new 42 which also means it’s the fist pizza cook in almost a year. Remembering what to do with the kk was easier than remembering what to do with the dough. 3 day cold ferment with 00 flour at 70% ended up being harder to handle than expected. The kids were through the first pizza by the time the last one came off the grill- so no complaints from them. The “adult pizza” of the night was fig, goat cheese, caramelized onion and arugula. Cheers!

  14. Hey guys. Wanted to thanks those that helped me with ideas for cooking Thanksgiving turkey. It turned out great. I cooked two of them. Definitely moist. Thanks for the help. I used applewood pellets in the cold smoker. I think though next time I may just use very little smoke though. As I did this cook though I came up with some questions which I will post in the other topic areas. Everyone was pleased with the end product.. komodo kamado for life.

  15. It has been great @swoff1. Other than I was just a total noob and didn't call Dennis on my tile work. Really if you do it right and only apply a small amount of grout patch, it's "no big deal". I love my KK, and I have been cooking a good bit on weekends and posting the results. I love all the real estate on the 42. Look at how big this thing is (see photo attached). I cooked Al Pastor, the remainder of the pork butt I used for the Pastor and another butt and still had enough room for a clear path to the firebox. I can't wait to do a huge BBQ cook with several butts for a gathering or another El pastor cook but with 4 or 5 vertical spits going and invite the whole street. These things really are unreal. Awesome Awesome cooker and worth the effort. There will be many stories and good times had with this thing, and it has already started.
