Tony, yes the smoke house likes to have a more coarse grind on their pork. I think the colour is off, don't recall the meat being that yellow. It's that time of year when all the lighting is artificial.
A new smoke house opened up about 10 mins. from me so I had them make me some sausages and I took them home to cook on my KK16. [emoji4]
