I love the design of the Niche Zero. It would be great to be able to switch the grind size from espresso to regular grind and not have all those leftover grinds in the grinder. -
I like this method of doing scallops, soak in salt/sugar(4:1) brine for 10 mins. then rinse and put the scallops in the SV bag with a little olive oil. Cook for 30 mins at 128F.

Right now I have a batch of mustard pickles on, the third and last for this year. I want to give some away so that is the reason for this batch. -
It is a beautiful dry day here so decided to take advantage of the situation and dry some herbs and pepper today. I have several of these still on the plants, they look so beautiful. They are a good 10 inches long. Decided to cut it into 1/4 inch strips and dehydrate it. This is the result, tasty. That went so well that I picked some rosemary and thyme to dry. I already have a small bottle of thyme but one can always use more thyme.

@tekobo, when you get older you will be wearing eye glasses most likely, that should eliminate the goggles. The thing about these blowers is that you can really control the air flow and keep it very low and that will help eliminate the sparks. With the hair dryer you really don't have that much control over the air flow.

I had 4 of these that I want to get rid of before the pork side I order arrives so I sous vided them all. Today I was having one for dinner so decided to light the Solo Stove to sear the steak. (Another Syzygies idea. It only take a few mins to get this stove going and I usually do that in a KK for safety sake. I wish I had taken a pix of the Konro grate on the Solo Stove, next time. It is such a quick way of searing, fantastic. Here are the results- This stove is small and it is not going to do searing for a crowd but for a small family, perfect because it only takes a few mins to light and then sear.
