Syzygies, I checked out the link, very interesting, thanks. Then I went to a site where I have bought some wheat berries from in Canada. I suspect they buy their Red Fife from the same farm mentioned in your article. Sounds like I need to place and order if my local organic store doesn't carry it. Shipping will kill me, it's on the opposite coast of Canada from me. Bruce, for you I'll send one of each. HalfSmoke, I only used 75% of your recipe I wasn't sure the whole recipe would fit in my cloche but I thin it would, next time. Next time I'm hoping for more oven spring, it didn't compare to yours.:( Bread is still delicious though.:)

Made a couple of breads yesterday/ this morning. First Syzygies Recipe with fresh ground flour- The crumb and taste test. A recipe from Halfsmoke also with some freshly ground flour. Started this one yesterday and did an overnight ferment. The crumb.

PCed the carrots and potatoes then put the potatoes through the ricer. Sprinkled thighs with granulated garlic and freshly ground black pepper, coated with Srirachi sauce then vacuumed for a few hours before putting on a 350F grill. Done, IT 180F. Plated with the veggies and chicken gravy. As always the chicken was extra moist, in fact, I had to go back and get another thigh it was so tasty.

Tinyfish, I've had my stove top PCs for many years and only recently have come to really appreciate them, wish I had done it sooner. Perhaps i didn't care for the lack of control on an electric stove and now that I have much better control with the gas I am liking to use them more often. The chili was surprisingly good and I will make it again. It should taste even better today. I need to smoke some cheddar cheese and shave that on the chili.

I'll start wth the complete recipe for the chili. These are scans from a book by Lorna Sass called Pressure Perfect. I made half the recipe and followed the instructions with the exceptions - I did not half the water and I only had whole tomatoes. Here it is after a 4 min. cook. At this point you add pepper, minced garlic and oregano. Now add everybody's favourite - beans. I would like to have added some shredded cheddar cheese but alas I didn't have any in the house. I would definitely make this again. So often you get a craving for chili now, well with this recipe you can pretty well have it now.:)
