Don't worry Mad Medik you taught us all a lesson dried out flour paste seals nothing lol. Seriously once you get the seal the smell will be beautiful you will see no white smoke at all. But I do Rember stuffing up I thought I had sealed my do. good at the start perfect thin smoke but during the course of the cook the lump had burnt and shifted causing the do to tilt which must of broken the seal because white smoke was pouting out lol Sent from my SM-P600 using Tapatalk

I would go with what Dennis recommend can't remember their name but it was stress free cost me 250 to get it delivered could have picked it up myself for cheaper but. Couldn't be bothered lol. As for lump Kj from bbqs galore is excellent or bunnings sell char Grill works well. I found someone that sells gidgee works good Sent from my SM-P600 using Tapatalk -

Thought I would cook some fish so I got thisput it in some water a cleaner way to descale itnot many scales lolI then chopped up some of thissome spring onion and tomato and gave them a quick cookadded some parsley. Nuts. Panko. And parmesan cheeseand gave it a good stiroiled it up and gave it a sprinkle of thisI got this rack ages agoon goes the fish upside down prongs under spine to stop it falling offthen I filled the cavity with the stuffing mixture and on it goes at 400f for 30 minlooking good the skin crisped up nicley gave it a quick rest wrapped in foil and ready dee made up a salad after the carvingand plated I quickly melted some butterand added some capers and lemon juice and poured it over the fishI suppose I could have turned the fish over but I love the crispy skin was a nice meal Outback Kamado Bar and Grill[emoji621]

Sounds like a great first cook easily done put it on and let it sit then bring the KK up to 550 f and let it vent and sear. Were abouts in Perth are you from the fees for customs aren't to bad I think I paid around $1300 but it was not about the cost for me it was getting the best thing I could. The KK Is an unbelievable over engineered work of art that delivers mouthwatering meals time after time. Outback Kamado Bar and Grill[emoji621] -
Or you could just apply some water with a pastry brush to keep it moist my do has a nice lip so 3 sheets of foil seals it perfectly Outback Kamado Bar and Grill[emoji621]

I have it sussed now I lit two spots and waited for it to get hold I opened the bottom vent and gave the cap 5 turns 15min later I was ready to close the vents to stabilize. Nice and quick I love it Outback Kamado Bar and Grill[emoji621]

Thought I would give these a quick sear gave them some peach rubgot Ora up to 500f and on they goone of them found a hot spot lolfoiled them for 15 min look readyand platedthe peach rub tasted awesome on the steaks Outback Kamado Bar and Grill[emoji621]

I noticed the other day foiling the lower grate and cooking my Scary challenge cleaned the bottom up nicley with the grates I just bring it up to 450 500 after a cook and let the heat clean them Outback Kamado Bar and Grill[emoji621]
