  1. Welcome. I looked up 'smokehouse 84' and saw some really good looking smoked/cured products. How long has the smokehouse been in the family?
  2. That looks delicious. Not sure about the cheese but, the chops look great.
  3. Great looking ribs. Nicely done.
  4. Lots of crackle. I took the pics 2 hours into the cook. Last 1/2 hour was at 500* to maximize the crackle.
  5. I haven't used a cyber Q or any other device. My thought was to learn without. I never thought about the benefits of the saved data. Hummmm, might have to rethink this????

  9. Welcome Pauli. You're going to love your KK. I'm about 40 minutes north of Napa in Lake Co. Ca. Maybe we can share/split a pallet of coco char in the future.
  10. Thanks MacKenzie. It was a fun cook. Really easy the only hard part is finding a pork belly.
  11. I did porchetta. It was my first attempt and it came out great. Wife, son, and daughter-in-law all raved about it. So porchetta, a pasta tortellini dish, and a Caesar salad. Only took pics of the prochetta on the KK

  13. I should know better than to post pics directly after MacKenzie's cooking pics. Oh well... Had some short ribs in the freezer that needed cooking. My growing nephews were in town so we ate them as an hors d'oeuvres.

  15. Growing up we never had ketchup in the house. My parents said ketchup was an excuse for a poor cook so I never acquired a taste for it. However I've seen some beautiful cooks accompanied with ketchup posted here. To each their own.
