The brisket all got eaten @Tyrus. The Husband said it was my best yet. It had been so long since I had last cooked brisket that I forgot about separating the flat from the point. School girl error. It made for a slightly messy direction change partway through cutting the meat up. Nobody seemed to care, they were more focussed on getting their share of burnt ends.

Good food, good friends and a very unusual game. Good to see the defences asserting their dominance but a shame to see Goff fall apart so badly. Oh well, I did win my bet on how many of us would be up to see the end at 3am. Looking forward to another roller coaster season in 2019/20.

Ooooh. Sounds exciting. Here we just have 8 coming for pre-Super Bowl brisket and I will be surprised if more than 3 of us last the distance to 3 am. Brisket had a nice wobble when it came off the KK. Now sitting, waiting for its moment, wrapped in butcher paper. No Pats hating going on here @Tyrus, just some good old California love. Hoping you will take on my bet as I am running low on rub here.

This is what it means to have been a fan of the Philadelphia Eagles for 25 years. I will be wearing this T-shirt until someone else wins the Lombardi tonight. As for tonight? The brisket is on and smokin'! Off to sleep. It is going to take some stamina to stay awake until the 2-3am finish here. I know the GOAT is great. I honour Mr Bellichick. BUT... I am emotionally drawn to Mr McVey and his crew. Donald, bad Mr Suh, Goff, Gurley, Anderson. Go RAMS!

What fun. You have a great journey of discovery ahead of you. My only piece of advice would be to consider getting two KKs if you can. KKs are so easy to use that you will want to do more outdoor cooking and that means you are likely to need things running at different temps and for different durations. Whatever you choose, you are sure to enjoy it! -
Nice looking meal Mac. What was it like? It looks like a completely different proposition to the usual beef ribs, smoked on the bone. Was it more like a steak then ribs?

Agreed re amazon pricing. I tend to buy direct from companies when I can. No problem with getting you the grate as a gift Mac. I won't be back on that side of the pond for at least a year and I will be sure to call on you when there is some item I must have sent over from Canada. Now when is the next John Fluevog sale?

I am puzzled by the fact that both Mac and @Pequod have hit such high prices on amazon. I am hoping that I am looking at the right thing here at the Char-broil site: https://www.charbroil.com/universal-stainless-steel-grate If so, it comes in at $29.99 in the US. I could buy two and post one to you when I am in the US Mac!

Thanks Mac. The smoke ring was an unexpected bonus. I did have a plated shot but I noticed the skid marks from launching the lamb onto the plate and declined to include the picture in my post. Your plated pix always look sooo good. Jealous.

Jerk shoulder of lamb for Sunday lunch yesterday. Smoked/slow cooked for about 7 hours. Served with a side order of rice and peas (red rice and white beans) and the most divine squash and mango dish. Interesting treatment of the ribs @MacKenzie - boneless and then sous vide AFTER smoking. Looking forward to seeing the end game. In the meantime we will savour @alimac23 and @Steve M's sausages!

Turns out it is 9 quarts. I picked it based on diameter - needed to be able to lay the logs flat in the pot. More binchotan cooking this weekend. Such a clean, pure burn. Here is the binchotan, brought up to operating temperature in the KK. New, safer transport mechanism - a cheap camping pot. Some super simple indoor cooking on the konro. Squid and sea bass. Cooking small quantities indoors in the winter is so convenient. And my carbon monoxide monitor sat by quietly, confirming that we were safe. And here is the remaining binchotan. Saved for the next cook by putting the lid on my camping pot. Binchotan is not cheap but it is good value, I promise!

Hi there. Have any of you tried this grate out yet? I just looked on the char-broil website and it had some poor reviews. Keen to get a back up grate for my konro on my trip to the US next month given the grates that they come with are no where near the quality of what we get in our KKs. Thanks.

Ooooh. I have to say that I am more interested in the KK itself. Great colour and I just love the 22 TT. Way to go, whatever height it ends up at!

I would like to post a photograph of a drink but whenever a nice drink is put in front of me I am so focussed on drinking it that I don't remember to take a photo. Does that mean I have a drink problem?
