50 day dry aged prime rib. 10 pounds 5 bones, cooked with a quick sear in the oven the smoked at 250 for 3.5 hours

Spectacular!!

That is what I cook on Christmas day. Hard to beat a dry aged Prime prime rib. I just ordered mine last week at the butcher.

I was going to cook it on the  rotisserie and I still may maybe just reverse sear it. If it turns out half as good as yours it will be a success.
