The other day they had seafood stuffed baked potatoes in Publix. I bought 3 of them to see what they were all about. It was one of my sides to the tomato marinated shrimp dinner. Thin cut, dry aged ribeye, CI seared for one minute per side. Served with a side salad and a baked potato stuffed with shrimp, calamari, and baby Octopus topped with a Asagio cheese crust. Charles - Prometheus 16.5", Cassiopeia 19" TT

I have a 19" TT and rotisserie. I use the rotisserie whenever I do whole chickens. Gyro rotisserie cooks are awesome too. I've done maybe 5 or 6 rotisserie cooks so far. I did replace my thumb screws with 5mm x 12mm Allen head bolts. Also if you want indirect with a drip pan you can get a small cookie sheet to sit on the lump handles. Dremel w/ cutoff wheel and less than 20 minutes. There's not much those cutoff wheels can't go through (haven't found anything yet). Here it is sitting on Cassiopeia's main grate. You can see the tab in the bottom right corner that I had to cutoff of the top left corner. It's a close fit left to right but works. This makes me very, very happy. I now have the smaller square one for Prometheus and the bigger rectangular one for Cassiopeia. I do want to get some baking steel but will probably just wait on Dennis to complete those fancy KK ones. Nice thing about these griddles is they have a small lip around them so if you're searing something with a bit of grease it doesn't run down into the KK. Since this is fitting in a 19" I'm fairly confident it would fit in a 23" without modification. Charles - Prometheus 16.5", Cassiopeia 19" TT

I have a couple of Lodge griddles. The small square one fits perfectly in Prometheus (16.5") The larger one is 16 3/4" x 9 5/8". The only thing keeping it from fitting on my 19" main grate is the grate handles. Looking and measuring carefully the Lodge griddles have two opposing corner tabs. If I cut one of those corner tabs off it should fit on Cassiopeia's (19") main grate. Will make the mod tomorrow and post a picture. I have a steak cook for tomorrow or Sunday night that would work great on the large Lodge griddle if I can make it work. Charles - Prometheus 16.5", Cassiopeia 19" TT

Up higher it would still work as a direct heat diffuser and still burn any fat that dripped down where there are no unlit coals BUT ....... And it's a big but ...... It's main purpose was to use it for rotisserie cooks. Not sure about the bigger KK's but in the 19" it would only work during rotisserie cooks if it's down sitting on lump basket. Nice little kamado. For a long time I owned an Akorn Jr (14" grate) that I took on vacations. I took it on my honeymoon at a cabin where I wooooed Mrs skreef with 4 nights of totally killer meals. Even took it to the beach once for cooking dogs and brats. Should have never gotten rid of that little kamado. Check out a SS canning rack sold at Walmart. You can take the arms off with a pair of pliers. Makes a great extender rack. I've even cooked a few things directly on it. When I get home I'll measure the one I have to see if it would fit in 10". Also cheap disposable pie pans should work for drip pans. You should be able to find them in a 8" version. I've cooked just about everything on that little kamado including a 7 lb butt. The scarey faces picture (in the baking thread) was cooked on it. I owned two of them but sold them to help fund the KK's. I was going to get a Primo Oval Jr with travel cradle to take on vacations but ended up pulling the trigger on Cassiopeia instead. I still want an oval Jr for travel but I doubt Mrs skreef will go for that idea. Might just have to take Prometheus on vacation one day - very heavy but I think me and my son could manage it. Nice looking veggie burger. I hear what you all are saying about taking the food porn. It took my family (mostly my son) a good long time to quit complaining about the food porn. Now he realizes the complaining doesn't get him anywhere so he just rolls with it. As for the picture quality that just comes with practice.
