My pizza challenge entry: chicken tikka masala pizza

Pizza looks great. -
Cooked some dry aged steaks for dinner tonight. Served with baked potato (microwave cooked), mushrooms and zucchini sprinkled with parmesan. Steaks cooking away My son's steak, a little over cooked for him, oh well. Now my steak. I like my meat well done, so look away if that bothers you...lol. I can't be the only one that likes meat well done. Look at the smoke ring and how tender it is. It helps that these were 40 day dry aged Canadian Prime steaks. Zucchini sprinkled with parmesan after being under the broiler for a minute.

Ken those look great. I have never tried an enchilada cook before, never eating an enchilada either. I have to give them a try very soon. They look like a pan of tasty goodness.

When using a temp control unit, you open the top damper just a crack until you feel air push out. You want the fan to push with some resistance. For low and slow I start with a full charcoal basket and use a fire starter in the centre. I let the KK come up to temp and heat soak without the fan. After heat soaking for at least an hour or more, I would then use the fan

Who wouldn't be happy with food like that. My birthday is in Oct...hint hint. There nothing that beats smoke wood in the air, I love that smell. The pool looks so good!
