  8. These challenges are getting harder. On the positive side Charles won the December challenge with those delicious ribs wrapped in pig candy. For the last four months a KK member has won the challenges.

    Side Ribs

    Dinner all messed up tonight I had company all afternoon and it got in the way of my challenge cook. I started another thread with a couple of the other dishes I made.
  10. Testing a recipe for the Guru challenge. A mushroom thyme and lentil pie. I sautéed onions, carrots, mushrooms and garlic. To that I added some thyme, tomato paste and sherry and cooked till soft. To thicken the mixture I added some corn starch. I added the mixture to ramekins and topped with puff pastry. I cooked these at 400f for about 15 minutes. On to the zucchini fudge cake. I Mixed butter, sugar, vanilla, cinnamon, instant coffee, coco powder and flour then I added the shredded zucchini. I placed in a baking dish and topped with chocolate chips, chopped pecans and vanilla sugar. Cake is done The two plated together

    Not cooking for many but I figured I'd cook some for left overs.

    Side ribs are on sale this week so you know whats for dinner. I used a four way rub of Cimarron Doc's Sweet Rib Rub, Smokin Guns Mild rub, Eat Barbeque rub and Texas Original Rub. I cooked the ribs indirect at 225f.

  15. Having seen Ryans setup, the 32" is a perfect size KK. It makes me wish I had got the 32/23 setup...oh well I'll survive.
  16. The best of both worlds on one plate...yum! yum! The only thing better then seeing a two KK set up would be three. Hey Charles time to pull out the magic eraser, vent caps are getting dirty.
