  1. I couldn't see the pic but I've done 7 racks of ribs between the two levels inter changing main rack ribs with upper rack ribs once. They came out delicious.

  6. The upper rack does come in handy. I'm sure you can add it to your KK. Great for pizza, spatchcock and multiple level rib cooks to name a few.

    Wow just wow that cake looks fantastic.
  15. Montreal smoked meat, pastrami and corned beef are all very similar. The spices and the smoking wood are what make my recipe like a Montreal smoked meat brisket.
  16. I brined a brisket for 10 days and put it on Sinister with some sugar maple wood chunks.

  20. The breading on the wings looks so delicious!! Who wouldn't want a plate of that food. Another home run.
  21. The roast in my cook was a 16.5 lb roast and I cooked it in the rotisserie at 225f indirect for six hours to an internal temp of 130f. I actually closed the vents down a little more three quarters of the way through the cook because I was a head of schedule. For my liking no further sear was needed. If I did need more of a sear I would remove the rotisserie basket remove the deflector and reinstall the rotisserie basket. As MK1 says the rotisserie is not necessary because of the convection cooking in the KK but its so cool to spin cook a prime rib in my opinion. No matter what you decide I'm sure it will be perfect.
