  1. No worries Michael. I used the round stainless steel drip pan wrapped in foil. The drip pan sits on top of the charcoal basket handles.
  2. I agree with Wilbur, 250 lbs per caster is nothing at all. The quality casters that come on a KK can handle way way more then that. Are we ready for question number #2.
  3. Wow!! home made ricotta too.

    Dry rub ribs

Love me some dry rub ribs...great job.
  5. Tonight I thought I would try the MacKenzie Scalloped Potatoes. I followed the recipe except I used onion powder instead of real onions ( kids ). The potatoes came out perfect...thanks MacKenzie. I cooked some baby back ribs and I tried a new rub that Robert recommends the Texas BBQ Original Rub. The rub is great on ribs...thanks Robert. Not many pictures since I've posted lots of rib cooks. Scalloped potatoes ready to cook. All plated

  11. What a fabulous meal Charles.
  12. 16.5 lb prime rib cooked indirect at 225f and closed the vents down a bit more the last couple of hours because I thought it would finish early. Roast cooked for six hours for an internal temp of 128f.
