  7. Same as most I used my deflector once now it's either foil or my double bottom drip pan Outback Kamado Bar and Grill[emoji621]
  8. I still have a flat plate gasser that is being used as a table, a Kamado Joe classic and a Jr. Since I got my KK these really don't get used but it's nice to know I have back up if I was going to get rid of any of them it would be the gasser. Outback Kamado Bar and Grill[emoji621]
  9. I have the 23 also but it should apply to all if I'm doing a low n slow say 250 I will open up all my vents and get to 300 then I will either foil my lower rack or use my double bottom drip pan and put it in and adjust my vents. Once I do this the temp will drop dramatically getting it to 50 above helps it recover quicker. In the first hour your KK is not heat soaked so setting Temps is easy once it's heat soaked it's alot harder Outback Kamado Bar and Grill[emoji621]

  23. Cool. you can tell these blokes have been looking at American forums talking in Fahrenheit lol. But like you said lamb has alot of fat and connective tissue but it breaks down quick hence only 4 to 5 hours retaining the moisture is the key just like the cook you just done. If you cooked it like a pork butt you would end up with a dry bit of crap that's where the Sauce might come in handy lol Outback Kamado Bar and Grill[emoji621]
