Did you have to go to polyface farm to pick it up or do they have outlets?
I have one on the kk right now about the same size. Sitting at 188 degrees internal after 12 hours at 225. It got to 160 in about 4.5-5 hours when I wrapped it in the middle of a flash monsoon.

I really like your cooks because they typically aren't the "standard" grill fare and it inspires me to move that direction. Do you usually use a charcoal that gives the extra dimension of flavor vs the oven?

Looks really tasty. Not sure if that is the same sauce I used but I've made a couple of his and they are money. I think that is one of them.
