My target for boneless white meat is always 140. I hate dried out poultry 😁 If cooking a whole bird I will typically cook until I get my white meat in the mid 140’s and dark in the low 170’s. The only thing worse than dry poultry is biting in and finding blood in the joints 😫

My local butcher shop had boneless turkey breasts so I figured it would make for some quick easy meals for a few days. Cooked it at 375 until internal temp reached 138, it carried over to 142. It was rubbed with a little yardbird and a little Lane’s Apple Pie Seasoning. I’ll chop some for turkey salad and cube some to put over a salad of greens 😁

Agree with Poochie, start at $20 and go from there. My guy got $40 as he was good about communicating his arrival and placed the pallet into the garage for me. Now the guy who came to move it into the back yard with the skid steer was exceptional. He got $60.

Technique For Getting Crispy Chicken with the Rotisserie

Mix a little baking powder in your rub. It will help 👍 And I cook at a higher temp than some folks, between 375 and 400. You can also split the fire box front to back so you would be half direct and half indirect if spinning the bird, I haven’t tried that one yet. Works for spatchcock turkey too -
Don't worry if that boneless jumps up to 165 or so real quick. It should stall for a long long time @ 235 degrees in the pit.

Sorry poochie, what did you say about wind chill ? I couldn’t keep up with the thread as I had to go out and shovel some snow 🤬 And always remember, pebbles are nothing but broken tiles, ones not good enough to make the cut 😁

I wonder if the fan from my FlameBoss 300 would work with one. I already have that and their adaptor. The FlameBoss adaptor is nice and only costs $10.
