@Steve M - I've never had an interference problem with my smoking pot and using the lower grate for my drip pan as the heat deflector. If you seriously overfill the charcoal basket, you might (I say MIGHT) create an interference problem, but the solution is simple, move charcoal around until the smoking pot fits. You definitely won't be able to use a smoking pot and put the ceramic heat deflector (or drip pan) on the handles of the charcoal basket.

Where else - Amazon! https://smile.amazon.com/gp/product/B00008ZA0F And here's the blower. https://smile.amazon.com/gp/product/B00D5FS7HA

I'm sitting here dying looking at that salmon and reading about all these amazing restaurants. Several are on my Bucket List. My stomach won't stop growling!

Wow. Good to know there were no bad outcomes. Yeah Harbor Freight can be OK for some stuff (like a special tool that you only need once for a project), but their stuff is very cheaply made, so I'm not surprised by this episode. I'm in the Bernzomatic camp with MAPP gas. On my 2nd one and love it. I broke the trigger mechanism on the first one. Now with the neat new battery-powered blower, I'm all set for how I start my fires.

Brunch Souffle on the Incredibly Versatile Komodo Kamado
tony b replied to dstr8's topic in KK Cooking
What stove? After I remodeled my kitchen, there's no classic oven, just a cook top, a counter top convection oven (which is used mostly for heating up breads), and the microwave above the cook-top. @dstr8 - thanks for several good tips. I've never seen the white vinegar bath to purge the mixing bowl. I knew about the need to remove the fats and soap, but no one ever said how? And I've never seen the tip about tracing the ring in the top before. And lastly, you had me with this little tidbit! Oh, hea-yall Yeah! -
Another f-ing insane dinner, dude!

Sneak Peak ~ KK 3/8" A36 Baking Steel

^ +1. If I could replace all my Calphalon with de Buyers, I would! But, they don't make pots, just skillets. -
That's the fun part of this journey - trying different things and seeing what works. Looks like you are well on your way to cranking out great pizza. That 2nd one looks damn good. Enjoy the ride, just like the rest of us!

Sneak Peak ~ KK 3/8" A36 Baking Steel

For all you folks out there that don't speak metallurgy, this is not stainless steel; so it will need to be taken care of like your cast iron or carbon steel pans, or it will rust - quickly! -
Do show us some pics of the finished product all nicely sliced up!

What are the meatballs for - pasta, sub sandwich, meat on a stick ???
-
Thanks for the tip, Charles. Checked it out - straight up bechamel sauce, just like for Mac & Cheese; for the rest of you folks so you don't have to look it up.

Bought the pump and tubing at PetSmart. I got this one, as it was the right flow rate recommended by Dennis. http://www.petsmart.com/supplies/air-pumps-air-stones/top-fin-aquarium-air-pump-zid36-16855/cat-36-catid-300087?var_id=36-16855&_t=pfm%3Dsearch%26pfmvalue%3Dfaceted Here's the tubing. I took the smoke gun piece with me so that I could make sure that it fit. It does. While it's silicon, I'm not sure about it's temperature rating. But for as cheap as it is, I'll give it a test run. http://www.petsmart.com/supplies/air-pumps-air-stones/top-fin-8-foot-silicone-airline-tubing-zid36-5098501/cat-36-catid-300087 Since the pump is a dual output, I also picked up this t-connection. I have enough tubing to splice the 2 outputs together with this and ensure maximum air flow to the smoker. http://www.petsmart.com/supplies/air-pumps-air-stones/top-fin-metal-t-valve-zid36-5098116/cat-36-catid-300087?_t=pfm%3Dsearch All tolled, I'm out less than $30 US. YMMV

Serious looking chops and pepperoni on the cheesy spuds sounds like a winner to me!

First time I'd heard of it, was back on Emeril's show on the Food Network.

Thanks all! The pimento wood/leaves/berries enhances the jerk seasoning, with a bit of spicy smoke. Wish that I had some dry rub to help hold the paste on a bit more. I usually have some in the pantry, but was out when I looked. Time to order some more. I've used both Dizzy Pig's Jamaican Firewalk and Jamaican Country Style (JCS) Boston Bay. @MacKenzie - yes, my cold smoker arrived. Went out today and bought the aquarium pump and tubing for it. My smoking woods from Fruita are supposed to be delivered today, but haven't shown up yet. I will post pics when I fire that puppy up! Thinking a nice piece of smoked salmon.

Sooooo, after waiting 2 months for this shipment, my Jamaican Pimento wood finally arrived today - unexpectedly (no tracking number). Fortunately, I had planned to do a rotisserie chicken anyway. So we went from my standard rotisserie chicken (Plowboys Yardbird rub and Butcher's BBQ Rotisserie Chicken injection), to Ya'Mon, Jerk Chicken. OK, fire up the grill and make a Mojito. Smoking pot with the long-awaited pimento wood, pimento leaves and some allspice (i.e., pimento) berries. I was inspired by Raichlen's Project Smoke cook. Chicken in the roti basket, direct heat. Started out low (275F) while the KK was heating up to target (325F). Bird was injected with Vernon's Jerk Marinade, Dark Rum, and a splash of water (blended in the Vitamix to a nice injectable slurry). Outside was slathered with Vernon's and a splash of water. And Yes You Can, rotisserie an ear of corn! Did a trial run before heating up the grill, so I knew that I could secure it in the basket. Chicken is done. Plated, with the ear of corn and some bowtie pasta in my favorite jarred sauce - Michael's of Brooklyn's Homestyle Gravy. Ya'Mon, this was a tasty dish!

How Many, What Size, Where/How to Deploy?
tony b replied to Pequod's topic in KK Pre-Sales Questions
Yep, that's the one. You will likely get Dennis' latest upgrades for the adjustable/locking shafts and mounting bracket, so you should be set when it all arrives. I just took delivery on the cold smoker yesterday, so I haven't gotten a chance to use it yet, but soon. You immediately notice how well built it is - just like everything Dennis makes! I have wood chips from Fruita being delivered tomorrow. Still need to get the aquarium pump and tubing. Had a plan to get high temp silicon tubing from my local homebrewing supply store, but this is a really small ID and they probably don't carry anything this tiny. -
Looked for those sausages at CostCo here, but they didn't have them. You guys must not let them cross the border! How was this batch of fries? Crispy?

Nice bird and rice/couscous dinner! I love them both, but have never mixed them.
