MacKenzie Posted September 30, 2016 Report Posted September 30, 2016 (edited) The sauce was made using Roma tomatoes right from the garden. The pepperoni was KK smoked, the portabella mushrooms were precooked. Working my way up to baking a pizza, sitting on the deck enjoying a beer from Unfiltered Brewery, and made by a friend of mine. His beer is award winning. After the cool one, it was time to stretch the dough, 2 pizzas in the works- One dressed and ready for the grill. Baking at 475F for 8-10 mins. Baked. Ready to eat.:) The crumb- We had a killer frost last night but fortunately all the flowers were under cover, more of the same for tonight. Edited September 30, 2016 by MacKenzie 5
Pequod Posted September 30, 2016 Report Posted September 30, 2016 A thing of beauty! You do pizzas at 475? Can I ask what temp and how you do bread? Cast iron pot Dutch oven or other humidity enhancers?
Aussie Ora Posted September 30, 2016 Report Posted September 30, 2016 Looks delicious Outback Kamado Bar and Grill
MacKenzie Posted September 30, 2016 Author Report Posted September 30, 2016 Thanks, HalfSmoke and Aussie. @ HalfSmoke, I do my bread just a touch cooler probably 450F. No humidity enhancers, some times I just put the dough on parchment paper and then onto the baking stone, sometimes I use a clay baker, sometimes with the cover and sometimes without. The KK is really quite moist so I just don't worry about it. 1
Bruce Pearson Posted October 1, 2016 Report Posted October 1, 2016 Great looking pizza Mac. Making my mouth water looking at them. You cook such great looking and tasting food. Can you send me a slice? lol
MacKenzie Posted October 1, 2016 Author Report Posted October 1, 2016 Thanks, Bruce, you just got in on time, there is one piece left from those 2 pizzas and I'll put your name on it and happily FedEx to you.
Bruce Pearson Posted October 1, 2016 Report Posted October 1, 2016 Thanks Mac I'll be waiting for FedEx.
ckreef Posted October 1, 2016 Report Posted October 1, 2016 Great looking pizza. You always got awesome toppings. I always go for standard pizza toppings. I think I need to mix it up a bit in the future.
MacKenzie Posted October 1, 2016 Author Report Posted October 1, 2016 Thanks everyone. It was very good, I liked the portabellas as a topping.:)

tony b Posted October 2, 2016 Report Posted October 2, 2016 Nice pies, MacKenzie. While we're starting to feel like Fall here, not flirting with frost yet. Good, because I've still got tomatoes coming in and my chile peppers are just starting to ripen.
MacKenzie Posted October 2, 2016 Author Report Posted October 2, 2016 (edited) Tony, I hope the frost stays away for several more weeks for you. Edited October 2, 2016 by MacKenzie
tony b Posted October 2, 2016 Report Posted October 2, 2016 Thanks, MacKenzie, but it's up to Mother Nature. Not so worried about the tomatoes, but need to harvest all the chile peppers to make another batch of hot sauce.
tinyfish Posted October 3, 2016 Report Posted October 3, 2016 Fine looking pizza's and the beer sounds good too.
MacKenzie Posted October 3, 2016 Author Report Posted October 3, 2016 Thanks, tinyfish. If you are ever in Halifax look them up, "Unfiltered Brewing"
