  3. Just back from our trip to Montana. I soooo wanted try out barbecuing in the cold but couldn't bring myself to spend any more time than necessary outdoors, let alone try to clean up a gas BBQ before I could use it when there was a perfectly good stove indoors. Hats (and all other items of clothing required) off to you @tony b and all who brave your extreme weather to keep cooking through the winter.

  4. Decided to upgrade my espresso game and went with the Decent Espresso DE1PRO. It uses the software on the tablet to design custom flow/pressure/temperature profiles which then control a unique water heating, pumping, and mixing system to achieve the design profile. It comes with several preset profiles that emulate other machines or are designed for particular results (e.g. milk drinks, straight espresso). But the real power is in designing your own, or downloading one somebody else created. An extensible library of profiles. Two pics. One has better lighting for the machine itself. The other better shows the tablet. Engineers will get the reference to “software-defined”, as in software defined radios. Very similar concept in which The radio can generate just about any waveform you program it to. The profiles here are the same thing...coffee waveforms. Cool, eh?

Hello Just wanted to show you all the new Flame Boss 500 Wifi controller for my 23 KK The probes have a straight jack that slides through the hole in the side great it can controller the pit and monitor up to 3 meats it’s Wifi and even works with Alexa i am in no way connected to this company nor do I get products free or at a discount I think this is the best temperature control option for the KK grills because if the straight jacks It even detects the lid open and pauses the fan i am cooking a holiday ham by putting a glaze on it Thanks Tom

  7. Pequod, I hear what you’re saying but my reality my collide with my family’s reality. My wife loves pour over coffee but hates making it. I replaced a keurig which was garbage to me but served the purpose for my wife. We have a 1 and a 2 year old running us ragged. If I convince her to get one it’ll have to be something very user friendly for someone who doesn’t cook or care about the detail of brewing the best cup of coffee. I hope it doesn’t come across as my wife doesn’t care because she does. I have every toy I’ve ever wanted so I also think it’d be nice to get her something she may love too.   8. The main reason I bought my first cazuela was to use it on the stove. A traditional Spanish recipe, bacalao al pil pil, requires you to continuously rotate the cazuela to get your salt cod and oil to form an emulsion. You jig the cazuela gently, round and round on the heat for 20 minutes or more. I know it sounds nuts but it is one of those magical kitchen events, watching this wonderful mayonaisse-like sauce emerge from two ingredients - fish and oil. And it tastes great.

  9. I like to think of it not as being anal, but putting your geek credentials on display for all to see. I mean...coffee waveforms...how Geeky Cool is that? I can design my own flow profiles and test the results in the cup. The recovering fluid dynamicist in me is downright giddy.

  10. This is so funny. I am not sure whether it would be a good or a bad idea to show The Husband this thread. When the commercial coffee man came to plumb in my husband's coffee set up, they got into a conversation about extraction rates. Apparently, when they started discussing fractions of seconds my husband said "I'm not anal about it or anything". The coffee man looked at husband, looked at kit and said, "that ship has sailed". I don't know what will happen if I show him this thread. He might be happy to find someone more obsessed than him or, oh no, he may try to fit even more kit into his coffee corner!!

  13. Got it. Gotta match your lifestyle for sure. Just be prepared. Espresso is a bit finicky and a slippery slope. You think you can just get by...and the next thing you know you're buying a $3,000 grinder. We bought a "just get by" $200 grinder with our Gaggia. It was upgraded in less than a month...just couldn't dial in a shot. Great espresso is great. Unfortunately, it's hard to make. Bad shots are very easy. Just fair warning. Have you considered a nice pourover or Chemex setup? Much easier, cheaper, and more error tolerant than espresso. If espresso is brisket, pourover is pulled pork in terms of ease to achieve great results.

  15. I opted for the pro model, which is a tad more expensive, but has high end components for continuous, high volume, commercial use. And yes... coffee has health benefits. Diet Pepsi not so much.

  17. Yes, very!!!!! After seeing this post...................I'm glad I don't drink coffee/espresso!!!!!! I might even have to buy the extended warranty for that machine!!! Off to get a Diet Pepsi out the the vending machine

  20. It's just an aquarium air pump everyone. They are a dime a dozen. If you have issues about $7 at Walmart will solve the problem or go to PetSmart and buy a high end one and your problems are solved for life. Of course the above comments has nothing to do with flashing in the "T" valve. When I bought my air pump at PetSmart I bought a metal gang valve for regulation.

  26. I've only ever made dry yeast bread and have wanted to learn the whole sourdough style, so I just purchased the Tartine Bread book and made my first sourdough starter and bread. I followed the recommendation to use a dutch oven (more steam) in my regular oven. This worked well and produced beautiful boules (see photo). I'd like to try baking inside my KK and wondered if anyone has pictures of successful KK loaves. Does the KK hold enough steam inside (similar to the dutch oven technique) to produce the crackly crust?

  28. This is a little photo heavy - it was a heavy day! Possibly over catered with food and alcohol! the shoulder ready to go on the beer selection finally found an excuse to open the double magnum I bought my Wife for her birthday last year: that’s only way I could chill it! beans ready to go shoulder all done and pulled happy with my spread! lunch is served we probably didn’t need to crack this: it was a Long day!

  29. Creamy Dill Chicken. I decided to run the wood fired oven differently today. Normally I run the fire on the left side and cook on the right side. Today I ran the fire in the back and cooked in the front towards the door. For cooks like this it gives you a bit more temperature control. If you need more heat push the pan farther inside towards the fire. Less heat pull it out towards the front.  I started with a loaf of bread. Not my best but not bad just the same.   I pan seared 2 semi flattened chicken breasts in a carbon steel pan. You can just barely see the foiled carrots in there to the left.  After I pulled the chicken I cooked down some onions and tomatoes. There is the new carrots now uncovered.   Once the onions and tomatoes were ready I added the creamy Dill sauce and let it cook down a bit (at around 450* it didn't take long). A really crappy money shot (very disappointed with this picture), but it tasted awesome.

  30. I've seen these before.. I believe most KK owners use them to store their accessories in.. That rolling door makes access a breeze. But is is purdy!

  31. More progress FM Island arrived....that was the good news Now to the bad news.....the ship is delayed.......so I’ll probably have to wait until mid March before my 32“ arrives.....so unfair!
