  4. Tel-tru thermometers are know as high end thermometers. The other kamado brands don't use Tel-tru's. I post a fair number of pictures of my temperature and the Tel-tru logo is clear in those pictures which implies the little things that make KK's the best kamado on the market. If I was designing the logo for the thermometer I would put Komodo Kamado in an arch at the top under the scale and Tel-tru in a straight line at the bottom. That implies Dennis spent the extra time and money to get a custom run of high end thermometers. Best of both worlds. A little extra branding is not going to hurt in my mind.   8. I appreciate the sympathy. I think I had the opposite problem with this meal. My last whole fish cook I considered a huge success and then this one where I figured I knew what I was doing. I didn't gripe too much at the dinner table because Mrs skreef and my son were enjoying their meal but dang it pissed me off. Charles - Prometheus 16.5", Cassiopeia 19" TT

  10. Last night was whole fish grilled direct on Cassiopeia served with rice Caserole and rosemary carrots cooked on Prometheus. Pictures first this time. The dinner tasted excellent. The sides were spot on and the fish was flakey and moist. But I did make three technical errors with the fish which makes the cook a failure in my mind but hey that's just me. 1) when prepping the fish I cut through the bones on one side of the spine from the inside. Stupid mistake and not sure what I was thinking. Didn't hurt anything but made the fish a bit harder to eat. 2) made 3 shallow slits on each side of the fish. When grilling direct it's best not to slit the skin as the slits makes it more difficult to flip without tearing up the skin. At least don't make so many, so big on this small of a fish. I should have known better. 3) using the upper grate I should have cooked direct at 500* not 400* like I did. In the past I've found that 500* is the magic number where your grates become truly non stick. This is extra important with delicate fish. Not following my own protocol - Bad Guru.   13. I too am a griller 95% of the time. Generally I can get the KK up to temp in the time it takes me to prep dinner but I can see how a gasser would be easier for quick after work cooks. Charles - Prometheus 16.5", Cassiopeia 19" TT
  14. Yea I know and it's for the awesome knife prize - eeeekkk, what was I thinking? - LOL Nah I like tinyfish, it's all good. But note I did have this discussion on the KK forum and not on Guru. In past challenges there have been some entries that were good cooks but didn't do so well, I believe because they had really bad plating and a really bad picture so they weren't as pleasing to the eye as they could have been.   15. Yes the green is generally more pleasing to the eye but doesn't contrast right with beans IMO. A white bowl with the beans, the white sour cream (?) and the green leaf would have popped out at you especially the green leaf with a white bowl background. Just like I try never to put orange shrimp on a red plate because they blend in and give no contrast. Same concept as putting something crunchy on something creamy - contrasting textures to the palate. When serving the family anything works. For the challenge cooks some voters may never look at the cook thread so you have to make the best of the picture. Many times I went back the next day and looked at my picture and realize what I screwed up from a picture stand point. Charles - Prometheus 16.5", Cassiopeia 19" TT

  21. Everything looks really good. My opinion on that veggie dish (not that I really want you to win - LOL) but the bowl is a little too green and doesn't give enough contrast to really make the dish pop.
